Sweet Potato Potato Salad
INGREDIENTS:
* 2 potatoes
* 1 sweet potato
* 4 eggs
* 2 stalks celery, chopped
* 1/2 onion, chopped
* 3/4 cup mayonnaise
* 1 tablespoon prepared mustard
* 1 teaspoon salt
* 1 1/2 teaspoons ground black pepper
DIRECTIONS:
1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool, peel and chop.
2. Place eggs in a saucepan and cover with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; cool, peel and chop.
3. Combine the potatoes, eggs, celery and onion.
4. Whisk together the mayonnaise, mustard, salt and pepper. Add to potato mixture, toss well to coat. Refrigerate and serve chilled.

My favorite way to cook them is as follows:
3-4 sweet potatoes
Brown sugar
Butter
Slice potatoes from end to end. Bake potatoes on 350 for an hour. Empty from their shell into a baking dish. Mix 1/2 c. brown sugar with 1/2 c. butter, melted, to make a sauce. Pour over potatoes and bake another 15 minutes. MMMMMMMMM

Use those sweet poatatoes to make sweet potato curry chips. Use a mandolin (or just slice them really thin). Put them in a baggie with some olive oil, parlsey and a little curry powder. Spread out on a baking sheet and cook at 350 degrees for about 20-30 minutes or until they start to crisp up.

Baked in the oven or microwave, they are a delcious and more nutritious substitute for white potatoes. Serve with salt and butter or offer some brown sugar, too.
Another wonderful and delicious method is to make French fries from sweet potatoes. Wonderful just salted or kicked up with a little cajun seasoning, paprika or cayenne.

You can do just about anything with a sweet potato that you can with a regular potato...or you can make it a dessert by chunking it up baking it with butter or margarine and adding marshmallow cream as a covering..also..a little cinnamon added is a nice touch...Good Luck!

Have you ever tried slicing them like french fries and deep frying them? Sweet potato fries are wonderful, Just deep fry them and give them a little shot of salt as quickly as you can after removing them from the oil so the salt will adhere better.

sweet potato bhajjias
slice and keep aside
make a batter of gram four and water. add salt and crushed pepper. dip a slice in the batter and deep fry in hot oil. fry till crisp. drain on a paper towel and serve with ketchup or green chutney.
warning. contains a lot of cholestrol.
my fav style; place on glowing embers. cover with the embers. poke with a fork to see if soft after 10 mins. cool, peel and slice or cube. and a dash of butter and cinnamon if u like.

Steam or boil 1 or 2 sweet potatoes. Peel and mash,
While still hot, add a knob or two of unsalted butter and one tablespoon sugar. Mix well, then add as much flaked coconut as you like.
Mix, then shape into balls. Place in paper muffin cups and serve.

Baking it rather is physically powerful, you like it to be delicate for a splash one, nicely cooked meals are much less complicated to digest, do not boil them they loose too many nutrients that way. I constantly steamed each and every thing for my teenagers, and pro it the way i could devour it different than with much less salt and sugar yet a good number of spice. I placed cinnamon and a tiny little bit of butter in my teenagers yams and a sprinkle of sugar. they want the fat and gets used to your way of cooking. i could additionally use the left over mush and skinny it down the next day and swirl in yogurt for breakfast. have exciting! :)
