As an artichoke lover, I suppose they're okay, but I suggest getting what's labelled as "artichoke bottoms". I've found that you see less heart hair and it's easier to rinse the brine off.

Yes, it's perfectly OK to eat them right out of the can.

It's a vegetable. Do you know any vegetable thats not ok to eat raw? I dont know any vegetable that isnt okay to eat raw except for too much ruffage for your body.
Anyways if it comes in a can its already cooked.

its perfectly OK to eat it rite from the can if you wish , its been heated inside the can during prose sing [ witch gives it that smoochy texture when its been caned ] be aware that the processing also removes some of the nutrients and taste of the fruit . i prefer fresh

Yeah, it should be fine. I ate out of cans for months and no ill effects (yet).
I still rinsed them off though just in case.
