I used to make rice pilaf with white rice, but now I use brown, and my family actually prefers it! The trick I learned is to toast the rice in a 350 oven for about 10 minutes before cooking it as usual. It gives it a nuttiness that is absolutely delicious, and it seems to help the grains stay separate and avoid mushiness. You can do the same with bulgur. Oh yeah, it's also really good for you, but that's almost beside the point!

My justification is that whole grains are better for you-I never use processed grains anymore in anything.
