It depends on what I intend to prepare.
Meditteranean kitchen is very rich on recipes with vegetables.
So, if I prepare a simple vegetable soup, I add tomatoes, onions, potatoes, carrots, pumpkins, parlsley, celery, salt and pepper.
I put half of them in warm water and the other half when the water is boiling. I have the sensation that my soup has a better density and it is more tasty like this.
I add also some rice, but I don't know if it is considered as a vegetable!
During the winter we prepare a beans soup, called "fassolada", simply adding some beans and red hot pepper.
This is a traditional food of Greece.
In Italy, they prepare another variety, a tasty dish called "pasta e fagioli" adding some pasta, red beans and prosciuto bone to the vegetable soup.
Very tasty and contains noooooooooo calories!
( kidding, of course)

I do not think that two batches were ever the same. Almost every pot has Tomatoes, Potatoes, Corn, Peas, Carrots, Green Beans, Garlic and Onion (sweet Vidalia, Leeks, Chives and or Scallions).
Items added on occasion include: Chickpeas (Garbanzo beans), Black-eyed peas, Lima beans, Beets, Spinach, Cabbage, Green Pepper, Broccoli, Cauliflower, Celery, Okra, Squash, Pumpkin and Zucchini.
Spices include: Parsley, Basil, Mint, Cumin, Coriander, Marjoram, Lemon Zest and a pinch of Red pepper in a beer or wine base.

Preferrably I would leave out onions. I hate those. I like greenbeans, peas, carrots, potatoes, corn, tomatoes, cucumbers even squash. Basically you can put anything in vegetable soup.
