Some anthropologists have said so, and since most mammals and most primates mate "doggy style," it's a reasonable assumption that the display of the hindquarters as an invitation to mate would be symbolized in the heart.

Similarly, some say we color the lips red to simulate the labia.

On the other hand, the two atria of the actual heart and the ventricles do sort of look like the stylized valentine heart.

The problem with all these anthropology questions is that no one back when they started using the symbol wrote down why they made it look that way.
