Sher-BET. I worked in a Baskin-Robins 31 store for 5 1/2 years and that's how I pronounced it and no one corrected my pronunciation. I've heard it pronounced both ways, though. So either way is probably OK.
My favorite was Rainbow Sherbet!

I think that probably has a lot to do with where you live. I prounounce it sher-BERT, but I'm from the Midwest. I've heard people from other parts of the US pronounce it Sher-Bet.

I've lived in several parts of the country and everyone I've met pronounces it sher-bert, and I do the same. Come to think of it, I've never seen it spelled sherbet even on the stuff I've bought at the grocery.
