Why can't you say or write the name of God in full?
Why spell only this..... G - D?
I'm a christian and I'm very curious.

The short answer is, it has to do with a prohibition against pronouncing, and more specifically writing and erasing the biblical names of God in Hebrew. Jews have a great tradition of taking biblical laws and interpreting them VERY broadly in order to not allow for any possiblity of even remotely breaking them. For example, the kosher law of not eating meat with dairy came from a biblical law prohibiting boiling a calf in its mother's milk. I could go on and on but I won't. If you're interested in learning more about it, look into the Talmud.

Anyway, because of this prohibition a tradition developed for not writing ANY name of God in full in ANY language. Not every Jew agrees with this though. Like me, for example. Some people do it because of tradition, others simply out of reverence.

Because there is only one god in jewish religion and god is all powerful in jewish religion. They dont want people writing god because then it will symbolize god and you may worship whatever you write it on. Like if i wrote god on a piece of paper, i might worship the piece of paper even when the paper is not god itself

well im not a jew and ive never heard of that rule but i am a christian! and i would like to know that too!
