lemon pepper seasoning...I tried once to soak it in Italian dressing, but you could barely taste anything. I am bored with chicken........

Okay... look on the back of ANY mashed potato box... the recipe they have is pretty good... basically you are taking the chicken and coating it with butter or margirine... then coating it with a mashed potatoe flake mixture that has all sorts of yummy seasonings in it... I know this is strange... but it actually tastes quite good.

Beer Can Chicken (while you are at walmart getting the seasonings, go by the soda/beer aisle and pick a a rack, its called a Chick-Can rack
Place a half can of beer or any soft drink in the rack which you set in a square cake pan
After washing chicken, place it over the can/rack sitting up
Baste the entire chicken with olive oil
Season with Louisiana spices (Zatarain's/Tony Chacon's)
Salt and pepper Cover liberally with spices
Put the pan with the chicken in a 350 degree oven, put 1/2 cup of water in the bottom of the pan
Cook 1 1/2 hours

No, you're just tired fo the way you have been fixing chicken! Try this and it will change the whole way you look at chicken...I like to serve mine with mixed veggies.

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; and remaining parmesan cheese mixture: add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

I prepare this this simple but tastey chicken for a client every 2 weeks in LA.

Rosemary & Thyme Chicken with Pan Jus
- 1 kosher chicken or capon, clean and pat dry
- 1 meyer lemon, quartered
- 1 T butter
- 4-5 cloves of garlic
- 4-5 sprigs each of fresh rosemary and thyme
- salt & cracked pepper
- 1 T butter, for pan jus

Salt and pepper cavity of bird, place 1/4'd lemon & garlic in cavity with several sprigs of rosemary and thyme. Rubber exterior with butter then season with salt & pepper. Place thyme between each leg against the bird ... set bird upon rosemary in a roasting pan. Bake at 375-425 until juices run clear. Remove chicken from pan. Place pan on stove burner at medium heat. Add 1 T butter to pan and 1 cup of water stirring with whisk to scrape away fat renderings. Cook down until about 1/2 cup of sauce. Salt and pepper pan jus to taste.

Cut chicken and serve with a little pan jus on the side. Enjoy.

Well, unbore your baked chicken (which by the way is the healthiest, most convenient method of cooking it) Sprinkle it with poultry seasoning (be generous), onion & garlic powder, tiny bit of salt and lemon peper and make sure it is covered tightly with a lid if you're using corning ware or foil and let her rip. No butter. It comes out real juicy and tender and tasty. Hope this helps.

Don't soak it in Italian, use the dressing in a pan instead of oil, that's delicious. Or get some stove top, prepare it and squish it onto the top of chicken breast, some butter and bake. Or do a stir fry, or BBQ it. I heart chicken.

Try this: Breadcrumbs, paprika, cayenne pepper, mixed herbs, mix it all up. Coat chicken with raw egg beaten then roll in breadcrumb mixture. Serve with baked tato's, salsa sauce for dipping the chicken in and veges. mmmm.

Did you ever -Put Grey Poupon mustard on it and then bake it? Coat chix breasts with Miracle Whip and sprinkle with bread crumbs and bake? Add some ginger and orange juice and bake? Serve this one with Minute Rice, made with orange juice instead of water.

Do not feel worry!!!
smashed garlic with vinegar, lemon, little ketchup, black piper, olive oil, paprika, tomato, small potato's, salt.
Mix them all with the chicken and rap them all with aluminum sheet.
put it in the oven for 110 minutes on 150 C

Try sprinkling a packet of dry onion soup over the chicken before you bake it....It is killer!
