what's soul food?

It was popularized in the American South when African -Americans were forced to eat the remains from the plantation house, and they ingeniously found ways to make edible what would otherwise be inedible by adding certain spices, oils, and so on. Unfortunately, it is not a healthy diet but is proof of how resourceful people can be in impoverished conditions. It is culturally important for that reason, and you might see soul food restaurants or meet people who eat soul food at special times throughout the year.

There is a lot of chicken and pork involved, but other dishes include different types of beans and cornbread.
