I have tried it both ways. Neither one suited me. Now I half bake them, let them cool, then wrap and freeze. I also do this with fruit pies, especially peach and apple. If you freeze these fruits without using something to keep them from turning dark, they turn a yucky brown. When I put them in pies and half back them, they hold their color and are much fresher tasting.
When you take them out of the freezer, put them directly into a preheated oven and finish baking.
Now, before you consider this a half-baked idea, try it, you'll like it!

OK, you can freeze them raw or baked, but baked is just silly. Freeze them raw, and here's how. (it'll work for best if you absolutely must bake them 1st for convenience) Put them on a cookie sheet (not touching each other) with either parchment paper or wax paper and put in your freezer. Once they are nice and hard, put them in a zip lock bag or some other air-tight container. This way, they wont freeze together.

You can freeze them raw or baked, but let them cool thoroughly before freezing them after baking. Simply wrap them as well as possible, air-tight, and freeze them. Nothing difficult here. If you want to make it easy for your fiancee, bake them before hand and they can be reheated in the microwave, but they'll taste better if baked. If you're planning for them to be baked after freezing, then put them into the freezer uncooked.

We served a chicken pot pie for lunches at the Bed & Breakfast restaurant. I made them in ceramic boats and often made extras. I wrapped them (uncooked) in plastic wrap AND foil .. or put them through the vacuum sealer. I would cook them in the oven either frozen or thawed and always had good results - however I generally used them within a week of freezing.

I'm pretty sure you should be able to make them up freeze them and bake from a frozen state. I used to buy homemade fruit pies for my cafe I kept them frozen until time to bake came out perfect every time.

wait till your pot pies are cooled down. Put into freezer bags and push all the air out you can. then wrap them in Heavy Duty aluminum foil, then freeze.

You could freeze them uncooked. Just wrap them in foil so they are not freezer burned.
