If you are using a 'canned' sauce, you will want to label and date it, then refrigerate it (not in a can) to prevent bacteria growth. No more than a week of refrigeration is recommended as mold will begin to grow. You can vacuum seal and freeze tomato sauce, for up to a year - but the quality will suffer upon thawing.

Once you open the jar, yes, or it will go bad and get moldy. Any jar sauce you use can be kept in your cabinet or pantry until you open it. Homemade sauce should NEVER be kept out. Upon making it, it should be used and if leftover, should be either kept in the fridge or frozen for use at a later date.
