You can often substitute 3/4 cup of water for 1 cup of milk and not really affect the end product. It's not something I would do personally, but it's an idea. Either way I have an excellent muffin recipe that's easy to customize.

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil

Use the muffin method to prepare - dry ingredients mixed in one bowl, wet in another. Mix wet into dry and stir until just moistened. Pour into lined muffin cups and bake at 400ºF for 25 minutes. To make your own, add 1 to 1 1/2 cups of just about any fruit, or even shredded cheese. You can add your own spices and use half AP and half wheat flour if you like.
