My guess would be a deeper shade of blue or purple, maybe blurple.

Fleshy Pink.

Because in humans blue means we're deprived of oxygen.
A flesh tone means we've got oxygenated blood.

So...since Smurfs are really really blue and they are living, they should turn flesh colored when they are choked.

I think fleshy pink because that shade of blue that they are must mean they have very little pigment so they wouldn't be brown when choked.

Probably white...it will lose the color in its face...while light colored humans gain color.
