My husband and I had cannelloni for lunch. We'd like to have something simple/light for dinner but I'm not sure what to make. I thought of soup but we've have soup so many times this week. Any other ideas? I don't want to order anything, I'd prefer to cook.

If you want light I suggest some fresh fish broiled with a side of veggies, bottle of wine and some candles.

This is very easy to make and taste delicious! I like to serve mine with mixed veggies
Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; and remaining parmesan cheese mixture: add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

I like to throw grilled chicken in with a stir fry mix. Start with some olive oil, and some Mrs. Dash and onion salt. Or some of your other favorite seasonings. Then put it over rice.

Baked Fish Recipe - Quick Fish Au Gratin
Delicious and cheesy baked fish is easy to prepare and makes a great everyday meal.
INGREDIENTS:
1 1/2 to 2 pound fish fillets (orange roughy, catfish, haddock, etc.)
1 can cream of mushroom soup or cream of celery soup
1/4 cup milk
1/4 to 1/2 cup grated cheese
1 1/2 cups soft bread crumbs tossed with 3 tablespoons melted butter
PREPARATION:
Heat oven to 400°. Butter a shallow baking dish.
Arrange fish in prepared baking dish. Combine soup with milk in a saucepan over medium low heat and heat through. Pour soup mixture over fish. Sprinkle with grated cheese and buttered bread crumbs.
Bake for 10 to 15 minutes, or until golden on top and fish is flaky and cooked through.
Baked Fish with Mustard Butter
INGREDIENTS:
2 pounds fish fillets or steaks, fresh or frozen
3 cups water
3/4 cup lemon juice
6 tablespoons melted butter
3 tablespoons lemon juice
4 teaspoons prepared mustard
3/4 teaspoon salt
1/2 teaspoon paprika
chopped parsley
PREPARATION:
Thaw fish if frozen. Cut fillets into serving-size portions. Place fillets in single layer in well-greased baking dish, about 12x8x2 inches. Combine water and lemon juice and pour over fish. Marinate in refrigerator for 20 minutes.
Combine margarine, 3 tablespoons lemon juice, mustard, salt and paprika; mix well.
Place fish on well-greased broiler pan. Brush fish generously with mustard mixture. Broil 4 inches from source of heat for four to six minutes *; turn carefully. Brush generously with sauce and broil four to six minutes longer or until fish flakes easily when tested with a fork. Sprinkle with parsley. Warm remaining sauce and serve with fish. Baked fish recipe serves six.
*Note: Cooking time for each side depends on how thick the fillets or steaks are. For fillets measuring 1 inch at their thickest, cook five minutes on each side. Adjust time for fillets of other size accordingly.

look at allrecipes.com.. its has lots of yummy recipes, and you can do an ingredients search which is so useful if you don't know what to do with the ingredients you have.. The recipes are rated too which is useful. I use it lots and recommend it!
