How to Ripen and Store Avocados
Avocados are one fruit that ripens off the tree.


Steps:
1. Allow hard avocados three to five days to ripen at room temperature. A ripe avocado is soft to the touch. (Image 1)

2. Store avocados in a paper bag. Put an apple in the bag to ripen them more quickly. (Image 2)

3. Store ripe avocados in the refrigerator for up to one week.

4. To remove the seed from an avocado, cut in half lengthwise (going around the pit), and separate the avocado into two halves. If the avocado is ripe, this should be easy. Lightly knock your knife into the pit, so that it sticks there. Give the knife a small turn to the right or left and lift up to remove the pit. (Image 3)

5. Scoop the flesh out of the shell or remove the peel (it should come off easily if the avocado is ripe) and slice.

Tips:
Keep cut avocados fresh by sprinkling lemon or lime juice on the slices. Avocado will turn brown otherwise.

Avocados do not freeze well.

To ripen a avocado, place the fruit in a plain brown paper bag and store at room temperature 65-75% until ready to eat (usually two to five days). Including an apple or banana in the bag accelerates the process because these fruits give off ethylene gas, a ripening reagent.
Soft ripe fruit can be refrigerated until it is eaten, but not for more than two or three days.
The Avocado Commission does not recommend using a microwave to accelerate the ripening process. So good Luck !

First of all you should not buy an avocado unless it is full. The test is simple: make sure the seed shakes. Nature has its secrets. Some unscrupulous shippers pick avocados before they are full. They will not ripen properly and they will be hard with an unnatural taste. When selecting avocados, make sure the seed rattles. Some green Caribbean species begin to show a brownish red colour to indicate that they are getting ripe. Put them in a darkened cupboard and check every morning. At first you will feel the avocado getting soft. Wait another day or two after the initial softness and when the entire pear is soft, slice, remove the pit (or seed) and serve your special way.
