Actually they do.
Get involved in the leadership of a conservative evangelical church and you’ll see blood letting and lots of people getting sacrificed.

All of the blood sacrifices of the Old Testament were pointing to the final sacrifice that would wipe out the Sin completely, instead of just cover it temporarily. That was fulfilled in the Sacrifice of Jesus Christ. But, as back then, you have to lay your sins on the offering, as your substitute, for it to benefit you.

Upon Jesus' death the Old Testament ended, ie blood sacrifice. Jesus was the lamb that was slain for our sins both in the past and in the future. After His death the New Testament was established, a Spiritual Kingdom.

Christianity is not a off shoot of Judaism. The Lord Jesus Christ came to be King of Israel and to set up His Kingdom on earth but the Nation of Israel rejected Him as their King and had Him crucified. Matthew 15:24 But he answered and said, I am not sent but unto the lost sheep of the house of Israel. When He shed His blood on the cross He did it for all that would believe and trust in Him. He made one sacrifice for sin because He was without sin. We no long need for blood to shed to cover our sins because He took our sins away. 2 Corinthians 5: 21 For he hath made him to be sin for us, who knew no sin; that we might be made the righteousness of God in him. Hebrews 10: 12 But this man, after he had offered one sacrifice for sins for ever, sat down on the right hand of God;

The blood of Jesus was our blood sacrifice. He took the place of sheep and goats. Judaism doesn't practice blood sacrifice any more either.

Because we as Christians realize that Jesus came as the final sacrifice, and blood sacrifices are no longer needed...
Study the religions, instead of getting biased answers here...a little bit of personal study time never hurt anyone.

Because Jesus already pay the price by dieing on the cross and rising up 3 days later. That was the last sacrifce that needed to be payed for our sins, so we don't use blood sacrifice but simply ask Jesus to cleanse us with his blood.

Ah! All the old blood sacrifices in Judaism are generally symbolic (wine) or done through Kosher slaughter these days.
Christians practice the same symbolic stuff when they receive communion.
Good question though.

varieties. you're finding at varieties and shadows of issues to return. they are figurative meanings to propitiation. it is why some atheist web pages think of that they are finding at contradictions concerning to sacrifices of bulls and goats. they don't understand (not basically atheists, even some Christians too), that God became exhibiting his reaction (non violent, extremely joyful, a turning away of wrath, i.e. propitiation), to an sufficient sacrifice. He might desire to be the only to declare it sufficient. and that's what God is exhibiting, what happens whilst an sufficient sacrifice is made. the actually propitiation comes with Christ, who died in that propitiatory way. The regulation of Moses became basically pointing in the direction of Christ, even prophetically. that's what maximum pass over!

Because we believe in the New Covenant, in which Jesus is our blood atonement and sacrifice. Therefore we are not under the law but under grace. Bible Theology 101..........
In the same way, after the supper he took the cup, saying, This cup is the new covenant in my blood, which is poured out for you. -Luke 22:20
By calling this covenant "new," he has made the first one obsolete; and what is obsolete and aging will soon disappear. -Hebrews 8:13
For sin shall not be your master, because you are not under law, but under grace. -Romans 6:14
