I'd use a nice think fish stock since the main staple of the Penguin diet is fish. The flavors should meld well together. I'd be sure to season lightly with sea salt as well. If well made, the soup should slide neatly down the gullet in one gulp.

My feeling is if those are the only two choices, you should use chicken, but why not use penguin stock?

Well, my recipe calls for 2 pounds of rendered walrus blubber in place of using chicken or beef. If you can't find the walrus blubber, then i guess chicken base would work.

Neither, penguin broth would work best. Use only the white part the black part is tough.
