Eggs benedict....the best.
Two soft poached eggs on toasted english muffin halves with a slice of ham and lots of hollandais sauce. Delicious.
Even better, replace the ham with smoked salmon and spread a thin layer of cream cheese on the muffin.

One of my favorites is to hard boil 3 eggs. I then take 4 waffles and toast them up. I butter two waffles and put a slice of cheese on the other two I cut the eggs in half and put three pieces on EACH of the waffles with cheese. Then I put the buttered waffles on top and eat like a sandwich.

Shakshuka - fry onions, can of crushed tomatoes, garlic and lots of pepper and tabasco (can fry red peppers too) - when it becomes more pasty, drop whole eggs into it on high fire, can cover a bit too if you don't like your eggs too runny. delicious

I love them over medium. Cooked enough so that the white isn't runny but where the yolk is still soft. But sadly I am allergic to them and can't eat them. :(
