I have a couple twist that I often do when I want something more than a traditional meatloaf.
love to add some spaghetti sauce to the meat mixture so it will be very juicy and moist when it cooks and then I top it with a chopped tomatoes and ketchup chutney in the last 10/15 minutes so that can caramelize and oh it's good...

Another twist is that I make kind of spread the meat in some plastic wrap then I stuff it: (and I have different things)
** hard boiled eggs and roasted peppers
** garlic sauteed spinach, black olives and feta cheese
** crispy bacon and cheddar cheese
** saute onions, mushrooms and swiss cheese
then I grab the plastic wrap and I use it help me roll the meat so I can form the log and I form the ends by hand so my stuffing doesn't come out. Then when baking I tend to do it at a lower temp so it cooks through and when its oozing out MAMA MIA !!!

Oh, I love meatloaf. Here is mine. And I make it myself, not website.

Preheat oven to 400 degrees.

2 Lbs hamburger meat
2 eggs
1 cup of bread crumbs or crushed crackers
1 can cream of mushroom soup
Add salt, pepper, garlic powder, a little bit of chili powder, all to your taste. Don't add a lot, just a pinch of this and that. Sorry I don't really have exact measurement, because when I make meatloaf, I don't measure things. When I mix it up I always use my hands. After mixing it up by hand place in a 13 by 9 inch baking dish and pat it down.
Put in the pre heated oven for 45 minutes. You will have to check it on occasion, don't just leave it in there without checking. After 45 minutes drain it carefully. Don't pour it out of the pan, or get burned, be sure to use potholders. Then you cover with your sauce and heat until it bubbles, usually 15 to 20 minutes.
You didn't say what kind of sauce. You can buy them if all kinds of flavors. What my family likes is this one. I mix a large can of tomato sauce with about a cup of bar b que sauce and pour over meatloaf. I made that one up myself. Like I said cook it for about 15 to 20 minutes until sauce is good and hot, be careful not to burn. Take it out, and enjoy.

Add a pkg of dry onion soup mix to a bowl in which you have added about three pieces of bread, torn into bite size pieces and 1/4 cup milk. Mix together and add 1/2 ground beef and 1/2 ground pork or veal. Add squirt of ketchup, mustard, or bbq sauce if you like. Add 1 beaten egg. Mix all together. Add breadcrumbs if mix is too sticky. Bake in 325 oven for about 1- 1 1/2 hrs depending on how much ground meat ie: 1- 1 1/2 lbs.

Here is my fave:

2-3 pounds hamburger
3 eggs
1 sm can tomato sauce or paste (sauce is best)
1 tsp garlic salt
1 package (not box) of Ritz crackers crumbled
salt and pepper
1 sm onion chopped ( I don't like onions but they give it better flavor and I pick them out)
Press into a large bread tin, Bake at 350 for about an hour to an hour and fifteen mintues. Pour sauce over and serve...

Sauce:
2 cups ketchup
1-2 TB mustard as desired
1/4 cup brown sugar

ENJOY!

This is my own and it is absolutely great and no one can fail with this:

Put about 1 kilo of mince meat in a bowl.
Add some chopped parsley ( I sometimes change and add some other herb- be adventurous)
Add I big finely chopped onion
Add six slices ( small) dry bread you have, break it into crumbs on top.
Add 1 tablespoon of tomatoe paste
Add a few sprinkles of Worchestershire sauce.
Add 2 big tablespoons of powered milk.
I small stock cube to a cup of hot water, mix and pour into bowl with other ingredients.
Add salt and teeny bit of white pepper powder.

Now make all the ingredients into a paste using your hand and kneeding all the ingredients in very well.

Empty the ingredients ( it will big one big lumb of meatpaste now) onto some foil. Using the foil turn the lump of meat into a loaf shape.

Now fold close the foil and fold the edges on the top and the side ( not tightly fitted - just right) till all wrapped.

Put into a roasting pan filled with water- not full. Put in oven on bottom but not directly touching floor of oven - just on a rack on lowest shelf. Leave for an hour and a half about- low to medium heat ( half way) Turn over meat loaf in it's foil half way through- water won't seep in.

When it is done you will find it a golden colour- perfect! It is very tasty!! Just put on platters with garnish and slice. Even slices don't break. You can make this with hard boiled eggs in the centre or parsley stuffing and you can also cover it in puff pastry for a fancy look. My family always have me make this for them.

If you take a meatloaf recipe, put half of the mixture in the pan, put a layer of pickles and your favorite cheese, sliced, on that, then put the rest of the mixture on top of that. Makes it a little better than your average meatloaf. (mix hamb. with: 1 egg,a small handful of crushed crackers or a little bit of oats-you'll be able to tell how much-worcestershire sauce, seasoned salt, a splashlet or two of tobasco sauce, and a little garlic salt. Simple and easy to do.) Instead of ketchup on top- use your favorite B.B.Q. sauce.

2 eggs

Mix the above. Place in loaf pan. Bake at 350 for one hour or until meat is no longer pink. Serve with brown gravy, mashed spuds, and salad. All American!
