Well... there are several theories. Yes, there was the bloke, Crapper (*giggle*) but I think it also comes from Old English and Latin and jazz.
Apparently, 'chaff' was a word meaning the excess corn of something from harvest, this was also called 'crappe' in French and 'crappa' in Latin or something to that effect.
The word crap, as you can see, was being used before this dude Crapper came along, however his part in the business (he was a plumber and salesman not actually an inventor) probably made it more popular.

God... I'm such a neek. In my defence, it was actually my mate that looked this up after we had a discussion about swear words and we were discussing 'crap'. :D
