If it is just a roast that doesn't really have sauce like a pasta dish, I would try some roasted rosemary-garlic potatoes. Cut up some small red potatoes into wedges, or just peel around the center of small ones, depending on what you like - toss them in olive oil, pepper, a little salt, rosemary and minced garlic and bake on a cookie sheet until they are done. Very tasty. :)

Tortelli di zucca con burro e salvia (pumpkin stuffed pasta with a butter & sage sauce), but there are a lot of great pasta dishes. I always look forward to tagliatelli tartuffato at the San Mineato Truffle festival in November too.

mabe dice some red potatos and season them w/ olive oil, garlic, salt, pepper, oregano and parsly...cover and cook on low until tender.
