I say take your recipe you know is a winner and tweak it where it needs to make it the best it can be. I took a recipe off a national company there cookie was to sweet everyone I knew who made it thought that but I liked the idea that the cookie stayed soft and moist.
So worked with the recipe until now there amazing and this is now my signature recipe because it started somewhere else but I altered the amounts increased batch size and turned out a great cookie!

Snickerdoodle Cookies
* 1 1/2 cups Sugar
* 1 cup Shortening -- soft
* 2 each Eggs
* 2 3/4 cups Flour
* 2 teaspoons Cream of tartar
* 1 teaspoon Baking soda
* 1/2 teaspoon Salt
* 2 tablespoons Sugar
* 2 teaspoons Cinnamon
Preheat oven to 375F.
Mix 1 1/2 c. sugar, shortening and eggs. Stir in flour, cream of tartar, and soda. Chill dough. Roll dough into balls the size of walnuts. Com- bine 2 t. sugar and cinnamon. Roll cookies in this mixture.Bake for 8-10 mins., cool completely on wire racks.

SNICKERDOOLE COOKIES

1 c. shortening
1 1/2 c. sugar
2 eggs, well beaten
2 3/4 c. flour
1 tsp. soda
2 tsp. cream of tartar
1 tsp. vanilla
1/2 tsp. salt
Mix shortening, sugar, and eggs together. Then add the vanilla and flour sifted together with the soda, cream of tartar, and salt. Add some more flour if dough seems too soft to handle. Roll in small balls. Put on cookie sheets and about 2 inches apart. Mash down slightly with a sugared glass. Bake 10-12 minutes in a 350 degree oven or until slightly browned. Dough should be chilled for 3-4 hours.

1/2 cup Butter Flavor Crisco
1/2 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
2 1/4 cups flour
1/2 teaspoon baking soda
3/4 teaspoon salt
3 teaspoons milk
1/4 cup sugar
2 teaspoons cinnamon
Cream together first 5 ingredients. Combine flour, baking soda and salt and stir into butter mixture. Add the milk. Chill the dough for a little bit while you combine the sugar and cinnamon in a small bowl. Roll the dough into 1" balls and dip in the cinnamon sugar mixture. Flatten them out slightly on an ungreased cookie sheet. Bake for 10 minutes at 375ºF.

1 T. granulated sugar
1 T. cinnamon
Beat butter and sugar, add egg; blend in dry ingredients except the last two. roll into balls and roll in the 1 T sugar and 1 T cinnamon mixture. place on cookie sheet and bake 400 degrees for 7 to 10 min.

DIRECTIONS:
1. Preheat oven to 400 degrees.
2. Mix 1 ½ cups sugar, the margarine, shortening and eggs. Stir in flour, cream of tartar, baking soda and salt.
3. Shape dough by rounded teaspoonfuls into balls.
4. Mix 2 tablespoons sugar and the cinnamon; roll balls into mixture to coat. Place about 2 inches apart on un-greased cookie sheet.
5. Bake until set, 8 to 10 minutes. Immediately remove from cookie sheet.
