the folds and ridges give the had "structure" to keep it from flopping over. If you ever see a chef with a floppy hat, it is the same type of hat, just not starched and structured.

The ridges don't stand for anything......just the way the hat was made.

It's just how the material has to pinch to fold into the round and give the hat some height....I think.
