I grew alot of Jubilee tomatoes. Big and yellow / orange. Any suggestions preparing?

They taste fine, I just want to know if there is someone different I can do while I have a lot of them.

My suggestion would be to eat them fresh with basil, olive oil, red wine vinegar, salt&pepper. If you have a whole bunch of them you could can them or just marinate them in the refridgearator. Make some eggplant parm, or speghettie sauce. Start with olive oil, add garlic, onion, etc...add tomatoes, suger, herbs,spices, wine or vinegar.

Make a fresh tomato sauce. I make it every year and my wife and the kids look foward to it. I refer to it as "the taste of summer." I use the fresh basil and red onios I grown and make Filetto de Pomadoro, or Fillet of the tomato. Toss it over some angel hair, or linguini. It requires some work but its worth it.

I had some a couple of years ago and made a salsa using them and some beefeaters and some home grown peppers. Made a nice colorful dish.

I usually make sauces ahead of time like cook them down with some veggies, puree, leave chunky and freeze them for a later purpose. It adds alot of flav to what ever you are making.

Yeah homemade salsa is good with yellow tomatoes......

i grew them one year and used them the same as red but that was for myself ....i think some people may that a red dish should not be yellow but they are sweet and delis....
