How about some Oven Fried Chicken ?

Take your chicken and after washing it get a gallon size zip lock bag and fill it 1/3 of the way with instant mashed potatoe flakes and then add season salt and pepper ,now shake the bag.
Next put you chicken in the bag a piece at a time and shake and lay in a baking pan, after they are all covered get your pam cooking spray and spray each piece until moist, now put it in the oven and bake on 400 for about 45 min. to 1 hour.-----its crispy and delisouse You are,nt frying forever on top of the stove and theres no fried food smell either just great chicken cooking.

This is a little different from eastern_diamond's recipe, but you will be surprised at the delicious taste. Mix a can of cream of mushroom soup with sour cream and season and stir well. Pour over chicken and bake at 350 for one hour. Like she said, it will fall off the bone. Delicious!!

sprinkle the chicken with whatever seasonings you like (I use garlic powder, onion powder, & ground black pepper). Then poor some Worchestershire sauce on top. Cook in the oven at 375 for 10 min. then take out and do the same to the other side. Put back in oven and cook until done. Put a slice of cheese (mozzerella, provelone, swiss...)on top and put back in oven to melt cheese. You can also sprinkle the cheese with some paprika.

Here is a recipe for chicken parmesan that is not breaded, so it is low in fat and carbs. :)

Place four chicken breasts in a baking dish, cover with 1 regular sized can of tomato sauce and spices (whatever you like - you can use Mrs. Dash or a mix of your own - I like garlic powder, oregano, basil, black and cayenee pepper) and bake at 375 for about 40 minutes. Remove from oven, cover with slices of either mozzarella or provolone and sprinkle with grated parmesan cheese - stick back in the oven until the cheese is melted and ENJOY! :)
