It is a trident -- a symbol stolen from Greek myth -- originally held and used by the God Poseidon. This was another of the church's attempts at making Pagan gods appear evil to convert more people. It is just the image of a fish fork (used to catch fish). Also, it is said that when Posiedon was angry he would strike the ground with his trident, causing unruly springs and earthquakes, ship wrecks, and drownings.

There is no pitchfork. That's just a common misconception gathered from cartoons.
