Chocolate Icing
* 1 square of chocolate, unsweetened
* 6 tablespoons boiling water
* 1/3 teaspoon vanilla extract
* 1 3/4 cups confectioners sugar
Melt chocolate in top of double boiler, add boiling water and stir until smooth; add vanilla and the sugar; stir until mixture is smooth. Or dissolve 1/3 cup cocoa in boiling water. A little cinnamon may be added.
Coffee or Mocha Icing
* 3 tablespoons hot strong coffee
* 3 tablespoons dry cocoa
* 1/2 teaspoon vanilla
* 1 1/3 cups confectioners sugar
Add coffee to cocoa, stir until smooth, add vanilla and enough sugar to reach spreading consistency
Lemon Icing
* grated rind of lemon
* 1 tablespoon lemon juice
* 1 tablespoon boiling water
* 1 cup confectioners sugar
Add lemon rind to juice and water, stir into the sugar, a little at a time, until thick enough to spread.
Orange Icing
* 1 egg yolk
* 2 cups confectioners sugar
* 2 tablespoons orange juice
* 1 teaspoon lemon juice
* grated rind of 1 orange
Add yolk to sugar, mix well; add the rest.
Fruit Juice Icing
* 1 teaspoon lemon juice
* 2 tablespoons fresh fruit juice
* 1 1/2 cups confectioners sugar
Add lemon juice and strained fruit juice (strawberries, cherries or grapes) to the sugar, a little at a time, until thin enough to spread.
Uncooked Frostings
Basic Butter Frosting
* 2 tablespoons butter
* 1 cup confectioners sugar
* 2 tablespoons milk, cream, sherry, rum or brandy
* 1/2 teaspoon vanilla
Cream butter and sugar well, add the flavoring and liquid until mixture is smooth.
Caramel Butter Frosting
* 1/2 cup butter
* 2 cups brown sugar
* 1/4 teaspoon vanilla
* heavy cream
Cream butter, add sugar gradually and mix very well. Add vanilla and only enough cream to obtain desired consistency
Chocolate Butter Frosting
* 2 tablespoons butter
* 1 cup confectioners sugar
* 1/2 teaspoon vanilla
* 1 square unsweetened chocolate melted over boiling water, or 1/4 cup cocoa
Proceed as for Basic Butter Frosting
Coffee Butter Frosting
* 2 tablespoons butter
* 1 cup confectioners sugar
* 2 tablespoons strong, hot coffee
* 1 teaspoon dry cocoa
* 1/2 teaspoon vanilla
Proceed as for Basic Butter Frosting.

Grandpop's Special Chocolate Cake
INGREDIENTS:
* 2 cups all-purpose flour
* 2 cups white sugar
* 3/4 cup unsweetened cocoa powder
* 2 teaspoons baking soda
* 1 teaspoon baking powder
* 1 pinch salt
* 1 cup milk
* 1/2 cup vegetable oil
* 1 teaspoon vanilla extract
* 1 cup hot, brewed coffee
* 2 eggs
DIRECTIONS:
1. In a large bowl, sift together flour, sugar, cocoa, baking powder, soda, and salt.
2. Add oil, milk, vanilla, coffee, and eggs; beat well. Batter will be thin. Pour into two 9 inch greased and floured round pans.
3. Bake at 325 degrees F (165 degrees C) for 25 minutes, or when top springs back when done. Cool layers on wire racks.
Grandma's Fudge Cake
INGREDIENTS:
* 1 (18.25 ounce) package chocolate cake mix
* 1 1/2 cups milk
* 8 tablespoons all-purpose flour
* 1 1/4 cups butter
* 5 tablespoons shortening
* 1 1/2 cups white sugar
* 1 teaspoon vanilla extract
* 1/4 cup unsweetened cocoa powder
* 1 pinch salt
* 1 cup white sugar
* 1/4 cup milk
* 1/4 cup butter
DIRECTIONS:
1. Bake chocolate cake mix according to package directions for two 9 inch layers. Let cakes cool then split layers in half.
2. In a saucepan mix 1-1/2 cups milk with 8 tablespoons flour, cook until thick and set aside to cool.
3. Beat 1 1/4 cup of butter and 5 tablespoons shortening until fluffy. Add 1-1/2 cups sugar and mix well. Stir in the flour mixture. Beat until mixture stands in peaks. Stir in vanilla.
4. Spread this mixture between the cake layers and refrigerate for 2 hours.
5. In a saucepan combine cocoa, 1 cup sugar, salt, 1/4 cup milk, and 1/4 cup butter. Cook over low heat and bring to a boil. Boil mixture for one minute, do not stir. Remove from heat and add 1 teaspoon vanilla and beat until thick, this may take a few minutes. Once thick pour mixture over cooled cake and let drizzle down sides of cake and over top. Keep cake refrigerated
Angel Food Cake I
INGREDIENTS:
* 1 1/4 cups cake flour
* 1 3/4 cups white sugar
* 1/4 teaspoon salt
* 1 1/2 cups egg whites
* 1 teaspoon cream of tartar
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon almond extract
DIRECTIONS:
1. Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.
2. Sift together flour, sugar, and salt. Repeat five times.
3. Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.
4. Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
5. Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.

I make my peanut butter frosting by using a buttercream recipe and add peanut butter in place of the real butter. You might use a couple of tablespoons of real butter, but thats all.
My favorite is spice cake with penuche icing. The icing kind of has a taste like caramel or maybe pralines. I just make a regular spice cake from the mix. Some of the mixes let you add applesauce. Check the box
Penuche (pronounced puh-new-chee)
Melt: 1 stick (1/2 cup) butter in a saucepan
Stir in: 1 cup brown sugar (light or dark)
Cook over medium heat for 2 minutes.
Stir in: 1/4 cup milk; bring to rolling boil, stirrring constantly.
Remove pan from heat and sit pan in cold water. When you can hold hand on bottom of pan the syrup is cool enough.
Stir in: 2 cups powdered (confectioners) sugar. Beat until thick enough to spread.
Delicious!
Hint: I bake my cakes in a 9"x13" baking pan. Makes it easier to frost them.

* 1 cup cola-flavored carbonated beverage
* 1/2 cup buttermilk
* 1/2 cup butter
* 2 tablespoons unsweetened cocoa powder
* 6 tablespoons cola-flavored carbonated beverage
* 4 cups confectioners' sugar
* 1 cup chopped pecans
DIRECTIONS:
1. Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly.
2. Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
3. Bake in a prepared 9 by 13 inch pan for 40 minutes at 350 degrees F (175 degrees C).
4. While still hot, frost with Coco Cola Frosting: Combine 1/2 cup butter or margarine, 2 tablespoons cocoa and 6 tablespoons cola soft drink and heat to boiling. Pour over 4 cups confectioners' sugar and mix well. Mix in chopped nuts and spread over hot cake.

I love to decorate cakes and this is a great recipe.
Buttercream Frosting
2 sticks of butter
2 cups crisco
1 tsp. butter flavor
1 tsp. vanilla
1/2 tsp. almond extract
2 lbs. confectioner's sugar
1/2 tsp/ meringue powder
2 tbsp. water
Mix the crisco and butter with a mixer. then add everything but the powdered sugar. Mix the powdered sugar in one cup at a time with mixer. It's not peanut butter but it's great. this is heavy (thick) icing. Add one tbsp. cornsyrup for medium and 2 for thin icing.

Visit Foodnetwork and look up Paula Dean. I just made her Hummingbird cake and Cream Cheese frosting. It was out of this world! My advice is, make it the day before you plan to eat it. It's more moist and it's more flavorful! YUM!!

This is soooo yummy and soooo fattening! add a cup of icing sugar to 3tablespoons of butter (not margarine) and mix together. Add more sugar if too runny or more butter ect. A couple of drops of food dye and it is sooo good. really buttery and sweet. It's my favourite!

frosting- podered sugar, and milk (anykind) mix, add more powered if needed to make thick add 1 tsp of water. tastes good
