Snickerdoodles

1 C. soft shortening
1 1/2 C. sugar
2 eggs
2 3/4 C. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt

Mix shortening with sugar and eggs until creamed. Sift together flour, cream of tartar, baking soda & salt, add to creamed mixture. Chill dough thoroughly. Roll chilled dough between palms to make walnut sized balls. Roll balls in mixture of sugar and cinnamon. Place 2 inches apart on ungreased cookie sheet. Bake at 400 for 8-10 min. or until lightly browned.

Monster Cookies
Ingredients:
1 cup brown sugar
1/2 cup white sugar
1/2 cup butter or margarine
3 eggs
1 teaspoon vanilla
3/4 teaspoon molasses
2 teaspoons baking soda
1 1/2 cup peanut butter
4 1/2 cups quick cooking oatmeal
1/2 cup chocolate chips
1/2 cup candy covered chocolate candies


Directions:

Cream sugars and butter. Add egg and vanilla; beat well. Stir in molasses, baking soda and peanut butter, then oatmeal, chocolate chips and candies. Drop onto cookie sheet and flatten. Bake at 350 degrees F until done. Do not over bake.

These cookies freeze well.

This recipe for Monster Cookies serves/makes 31 cookies

1-1/2 cups peanut butter
4-1/2 cups quick cooking oatmeal
1/2 cup chocolate chips
1/2 cup M&M's
Cream sugars and butter. Add egg and vanilla; beat well. Stir in molasses, baking soda and peanut butter, then oatmeal, chocolate chips and M&M's. Drop onto cookie sheet and flatten. Bake at 350° F until done. Do not over bake. Yields 31 large cookies.

You will LOVE THIS and it will become a family favourite for sure. Two bits of advice:

(1) do not stir marshmallows in butterscotch for too long or they will melt - do this part quickly, and
(2) I substitute the noodles for plain cheerios [make sure plain the others are too sweet] which are healthier and easier to find.

Chinese Noodle cookies

1/2 c. peanut butter
2 c. butterscotch chips
2 c. marshmallows
2 c. crispy chow mein noodles in can/plain Cheerios

Over double boiler melt the peanut butter and butterscotch chips. Remove from heat and stir in the marshmallows and noodles. Stir until everything is coated, but don't take too long or marshmallows will disappear! Drop on to a greased baking sheet and refrigerate.

QUICK OATMEAL COOKIES



1 1/2 c. milk
2 c. white sugar
1/2 stick butter
1 tsp. vanilla

Boil big only to a jellying point. Then add:

3/4 c. peanut butter

Mix:

3 c. quick oats
3 tbsp. cocoa

Drop on buttered cookie sheet.
Med. Rec.

How about this....

you will need:

Saltine crackers
1 bag of chocolate semi or milk (whatever you like)
2 sticks of butter
1/2 cup of sugar

I usually line my cookie sheet with parchment paper but you don;t have to.

Place saltines on cookie sheet (cookie sheet needs to have sides) until you can;t fit anymore.

Melt Butter and add sugar...bring to a boil.
Pour mixture over saltines and spread making sure every saltine has butter on it

Bake crackers for about 12 minutes or until golden brown

remove from oven

Immediately sprinkle entire back of chocolate chips over top of saltines...let them melt and then spread over top of saltines...let cool....break apart once they are cool.

Eat em and Love em...they are soooo good....Kinda taste like toffee with chocolate...

I make em for Christmas presents every year...
