When I cook for others, one of my biggest hits is my salmon burgers.
When I buy salmon, I buy extra so that one night I will have salmon steaks broiled with some olive oil, lemon juice and salt. Then I take the extra cooked salmon the next night mix it with parsley, worchestire sauce (sorry sp), egg, breadcrumbs and onion. Then just grill in or cook it in the stovestop til browned. Add some mayonnaise, drizzle w lemon jiuce and it is so good.
Another idea is a taco bar. Pretty easy to put together. A bowl of tomatoes, cheese, lettuce, meat, salsa, sour cream, etc. Then people can assemble their own.

Steak Creole
1 lb steak
1 green pepper
1 red pepper
1 onion
1 Tbsp minced garlic
2 cans tomato rice soup
flour
Directions:
Cut steak into thin strips. Coat steak with flour (you can add more flavor by adding spices to the flour). Melt butter in a large deep skillet, & brown the steak. Add onion, garlic, soup, and 11/2 cups of water. Cover and simmer on low heat for 1 hour stirring occasionaly. Add peppers and cook 30 min.
I like to serve it on top of white rice.

Ingredients:
3 tbsps vegetable oil
3 bay leaves
3 cloves
2 cinnamon sticks
1/2 tbsp cumin seeds
4 tbsps chopped onion
1 kg boneless leg of lamb, cut into bite-sized pieces
1 tbsp ginger puree
1 tbsp garlic puree
5 fresh curry leaves
2 tbsp red chilli powder
1 tbsp ground coriander
200 gm tomatoes, chopped
2 tbsps crushed jaggery
1/2 tbsp garam masala
2 medium potatoes, peeled,
cut into matchsticks and deep-fried until golden
1 tbsp chopped fresh coriander
Salt to taste
Method:
* Heat the oil in a large pan and add the whole spices.
* Then add the onion and fry until golden brown.
* Add the lamb, ginger and garlic purees, curry leaves, chilli powder, ground coriander and some salt and cook, stirring, for about 20 minutes, until the juices from the meat dry up.
* Add the tomatoes and cook, stirring, for 10 minutes, then add a litre of water and the jaggery.
* Bring to the boil and simmer for 25 minutes, until the meat is tender and the sauce has thickened.

A DIFFERENT PASTA DISH
Received from Chef Leo, Prince Macaroni Resturant
1 box pasta "shells" cooked
2 cans minced clams
Lots of smashed garlic
1 stick butter or like butter
Salt, pepper, parsley (fresh chopped is best)
1 bottle clam juice.
Saute all of the above ingredients till almost boiling. Pour over pasta shells. Pour into a bowl and eat with a spoon. YUM

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

Pasta. Just about any type noodle is fine. Make a little butter & wine sauce w/seasonings and coat it. Then toss in your choice of chicken, veal, shrimp, lobster, Italian ham, etc. Add a salad and maybe breadsticks and you have a meal that everyone will love.
An added bonus is that the ingredients are easy to keep in the house and it's quick to make.

Chicken Cordon Bleu
(Heat oven 375 bake 30-45 min)
4 (4 oz.) Skinless Boneless Chicken Breasts
12 Slices Deli Select Thin Sliced Ham
4 Slices 2% Cheese, mozzarella or pepper-jack (or cheese of choice)
Miracle Whip (lightly coat chicken) dip in
1/4 Cup Seasoned Bread Crumbs
Pound out chicken top with ham and cheese then roll up secure with toothpicks. Take Miracle Whip (or mayo of choice) and brush lightly over chicken. coat with crumbs and bake!

I like to bake up a bunch of chicken breasts on Sunday. I just use a simple oil & vinegar marinade. Then the left overs are good to use lots of ways during the week for lunches and dinners.
