This sounds horrid and I'm sorry if it is offensive....I used to be in the fundamentalist church so I think I have a good idea of their thought patterns....They are probably thinking.
"How come she looks so calm and at peace when she is not saved, and therefore is on her way to hell, while I am suffering, doing all this work for the Lord and I am not feeling peace or calmness....Oh well, I'll get my reward in the end."
Hopefully after they see people like you a few billion times, the thought will finally register to them that their thought patterns are not right.

They are probably in awe of you, respecting your determination to rebuild your home and community. And in shock at the devastation.
A group from my church spent a week in MIssissippi and New Orleans and they were changed people when they came back. They were glad to have some focus to the work they were doing, gutting some houses and rebuilding a church, because if they'd just been dumped in the middle of that wasteland they would have been overwhelmed with the magnitude of the work needing to be done.
So meeting people, or getting down to the work that was identified for them, was actually a relief from their shock over what the communities looked like, even 9-10 months after Katrina.
So cut 'em a little slack. They are in shock.
And best of luck to you. Please know that there are people all over the US continuing to pray for you and to look for ways they can help.

They want to express their heartfelt feelings of compassionate sympathy, but are afraid to because doing so runs them in the risk of being bitten back with, "You cannot FATHOM the heart-ache, pain and frustration this g_dda_m hurricane Katrina caused me; what I've lost and never can have back!!" Chances are, these kind folks have already seen such rage from others.
Still, they labor on in God's name, and I salute and respect them for it. A good way to "break the ice" and show your gratitude can be for you to offer some kitchen-made sandwiches and cold lemonade or soft drinks. This kind act can show these volunteers you're receptive and grateful for all their help and from there, you and they can speak openly about matters that need being let out.

It is the expression someone has when they are helping because they have been told that it is the right thing to do, rather than the expression one has when they are helping because they realize that everyone is an equal part of God.
One way you are doing it because you think that it makes you look favorable in Gods eyes.
The other you do because you realize that as a part of God it would be foolish not to help your brothers when they are in need. It is the recognition that what ever happens to the least of us affects all of humanity. It is the difference between resignation, to the idea that you need to do something to be a "good" person and doing it because you love all of the other parts of God.
Love and blessings

Honestly, they probably want to say something to you, but have no idea what to say that won't come across as trite. It's hard to think of the right thing to say to someone who is going through hardships tougher than you've ever experienced yourself.
