Part of the reason is that the food is so full of simple carbohydrates - cooked rice, deep fried whatnots, sweet sauces, etc. This causes a blood sugar peak, which triggers an insulin reaction, and your blood sugar goes like a yo-yo which means that soon afterwards you're hungry again. Low-GI (and most other) diet fads are a lot of nonsense, but in this sense its basic premise is sound: eat foods that take long to digest, and you'll feel full for longer.

There is a lot of excess fat and oil in Chinese food (just like McDonalds) which means it's never actually going to fill you up, just make you more hungry. Just like after you eat McDonalds, you probably feel like you could eat more.. it's all part of their scheme to sell more burgers.
Also, it usually takes 20 minutes for food to digest. In this case, because there is so much excess oil and fat in Chinese food, it takes longer, like hours, or days.

A lot of chinese food is high carbohydrate quick-release sugars, especially Sweet and Sour, Duck sauces, Chinese Barbecue, and Soy Sauces, not to mention white rice. These kick your metabolism into high gear, and don't have the staying power of other foods. So you're tanking up on high energy, low bulk foods, and not really filling up.

Someone once told me its the rice. It turns into sugar then burns up the food real fast. A metabolism thing. So when I have chinese food I try not to eat too much of the rice so I stay full.

Your stomach stretches after eating a large meal. If for example you eat a big meal in the evening you are much more likely to be hungry the next day than if you ate a smaller meal ... a vicious circle!

I think Aaltonen and Usullafollette hit the nail on the head. When you eat chinese food, you usually also eat piles of white rice, sweet and sour sauces, plum sauces, &c., all of which are simple carbs and are easily digested by the body.
Next time, you could try ordering brown rice instead of steamed white rice (it has more fiber, so it keeps you full longer), avoid sugary sauces, and get something with lots of veggies (also high fiber) and high quality protien.

Often this is because the food has MSG added, thats a flavour enhancer and has other weird side effects, one being that you feel full quickly, plus because the food tastes so good, it gets scoffed down double quick
