CREAMY DEVILED EGGS


INGREDIENTS:

* 12 eggs
* 1/3 cup Ranch-style salad dressing
* 1/2 (8 ounce) package cream cheese, softened
* 1/2 cup chopped onion
* 1 dill pickle, finely chopped

DIRECTIONS:

1. Place eggs in a large saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
2. Slice eggs in half lengthwise and remove yolks. Place yolks in a medium bowl. Mash together with ranch-style salad dressing. Mix in the cream cheese, then the onion and dill pickle.
3. Fill the hollowed egg whites generously with the egg yolk mixture. Chill in the refrigerator until serving.

I have what I consider to be a good deviled egg recipe. Boil 6 eggs (rapid boil for at least 4 to 5 minutes, insuring the yolk is thoroughly cooked). I take them off the stove and run them under cold water (so you can peel off the shells). After shelling, slice longways and remove yolks to a separate bowl. In this bowl combine 2 teaspoons regular mustard, dash of salt/pepper, 1 teaspoon minced dried onion, 1/2 teaspoon pickle relish, 1 teaspoon Miracle Whip. Combine all ingredients, then spoon back into egg whites and garnish with paprika. What I like about this recipe is the minced onion and relish. It gives the deviled eggs a fresh, spicy taste. Yields 12 pieces. Good luck!

DEVILED EGGS

6 eggs
1/4 tsp prepared mustard
1/8 tsp dill
3 tbsp mayonnaise
1/8 tsp white pepper
1/8 tsp paprika
1/8 tsp salt
1-2 tsp milk

Place eggs in a pan and cover with water. Boil eggs for about 4 minutes.
Remove from heat and place in ice water. Let cool down to room temperature.

Peel under cold running water. Slice eggs in half. Place egg whites on a plate or serving tray rinsed and dried.

Mash egg yolks with a fork and add all ingredients except for paprika.

If desired, you can add more mayonnaise with a little bit of milk (small amounts at a time, as you can always add but not take out or you'll end up boiling another egg or two.. lol..)

Fill each half about a teaspoon and sprinkle with paprika. Cover and refrigerate up to 24 hours.

Makes about 6 servings. Be creative, top with bay shrimp, anchovies, or add some of your favorite spices.

Boil the eggs, usually about 15 minutes is good. Before breaking the shell, let them stand in cold water until cool. Break the shell, cut the eggs in half, and remove the yolk. Mash the yolk, salt and pepper to taste, and add a little mayo, mustard (mainly for color), sweet pickle relish, and onions if you like. This is basic. Diced celery, green pepper, and pimento are optional. Pipe the mixture back into the egg halves and lightly sprinkle with paprika. Garnish with fresh parsley for a beautiful presentation. Chill and serve.

Basic Deviled Eggs Recipe:

12 large eggs
1/2 cup mayonnaise
1 1/2 tablespoons mustard
Salt and pepper
Paprika

Place eggs in a saucepan with water to cover plus 1 inch. On medium-high heat, bring the eggs to a low boil. After 15 minutes from the time they start to boil, remove the pan from the stove and run cold water directly on the eggs for a few minutes. Peel under cold running water, also.

Halve the eggs lengthwise. Remove the yolks, place them in a small bowl, and mash them with a fork. Add mayonnaise and mustard, salt and pepper to taste. Mix well. Spoon the mixture into the egg-white halves. Garnish each with a sprinkle of paprika, a parsley sprig, or as desired and voila! The Deviled Eggs Recipe come to life. Makes 24 appetizers.

Note: A bed of decorative lettuce leaves or alfalfa sprouts will keep the eggs from sliding around a platter or shallow bowl.

* Substitute sour cream for the mayonnaise.

* Substitute mustard with Dijon mustard or spicy brown mustard.

MEXICAN DEVILED EGGS

8 hard boiled eggs
1/2 cup shredded cheddar cheese
1/4 cup mayo
1/4 cup salsa
1tbsp sour cream
salt to taste

slice eggs in half remove yolks
in a small bowl mash yolks with cream cheese, sour cream,salsa plus shredded cheese scoop small spoonful of the mix into hollow of eggs.

Boil the eggs and de-shell them. Cut each one in half lengthwise. Gently scoop out the yolks into a seperate bowl and mash them up. Add mustard, mayo (about a heaping tablespoon of both) and maybe some pickle relish. Mix it all up[ and spoon it back into white shells, cover and refridgerate.

Take cold, hardboiled eggs, slice them in half lengthwise, put all the yolks in a bowl. Then add whatever you want - most people do a bit of mayonaise, and spices to suit your taste. Then scoop or pipe the yolk mixture back into the egg halves and dust with paprika or pepper. Serve cold. Enjoy!

Classic Deviled Eggs
Serve for any occasion, whether it be a wedding feast, a picnic in the park, or for lunch or dinner!

Items Needed: (for 12 Deviled Eggs)


# 6 hard boiled Eggs (large)
# 3 tablespoons mayonnaise or salad dressing
# 1 tablespoon sugar
# 1 teaspoon mustard (honey mustard is great!)
# 1 teaspoon vinegar
# salt & pepper to taste
# paprika (optional)

To boil eggs, place eggs in enough cold water to cover completely, bring to a rolling boil over high heat.

Reduce heat to a lower MEDIUM BOIL and cook an additional 12 minutes.
Promptly chill eggs so yolks stay bright yellow.

Remove shells from eggs, and halve lengthwise with a knife.

Carefully remove the yolks, and place in a medium bowl.

Mash yolks with a fork, and add remaining ingredients.

Very carefully spoon mixture back into the egg white halves. Garnish with a light sprinkling of paprika (optional).

Curried Deviled Eggs

Deviled eggs are always immediately gobbled up at any picnic or party, but these eggs seem to be grabbed even faster than most other recipes. The curry powder adds a unique flavor to the eggs that really makes the flavor pop, but it isn't so different that it really upsets the purists. Most people cannot even identify what the different flavor is, they just know they like it. This is our basic recipe with the addition of curry powder…if you normally add different things like sweet relish or minced onion, go ahead and add them too as the curry flavor is great with both of those additions.

8 large hard-boiled eggs
1/3 cup mayonnaise
2 tablespoons minced scallions
1 teaspoon curry powder
Salt
Freshly ground black pepper

Peel the eggs and cut them lengthwise in half. Remove the yolks and place in a small bowl. Mash the yolks until smooth and add the mayonnaise. Mix until a smooth paste forms. Mix in the scallions, curry powder, and salt and pepper to taste. Spoon the mixture into the egg halves, or pipe using a pastry bag and star tip. Cover and refrigerate for up to 8 hours before serving.

Makes 8 servings.
