First of all, low carb diets aren't healthy in the long term. You're restricting yourself of carbs -- your main energy source. Yes, you do lose weight. Why? Because your body, once off of carbs, reacts by getting rid of the water weight that accompanies eating carbs. Just eat lots of fruit and veggies. Flour, on the other hand isn't healthy for you, PERIOD. Also, potato flour is 94% carbs. This type of carbohydrate will cause a weight gain.
