Why should you assume she's feeding her child unhealthy foods because she wants to throw in a corn dog or pizza bite now and again! When you're making lunches 5 days a week for weeks on end, I don't think it's going to kill a child to throw in something a little different now and again! You're doing a good job, mom! Thank you for taking the time to make your child a lunch!

What you can do is that you can double dip the dried seasoned flour. What I mean is that dip the chicken in the seasoned flour first then dip it in an egg yoke and then dip it in the dried seasoned flour again. This should make your chicken crispy longer. Oh almost forgot when you finish frying the chicken don't put any cover on it, It's gonna make the chicken soggy.

4 hrs is too long but the main way to do it is in side the oven on the lowest heat, say 140 degrees F, on a rack, uncovered

flash fry { fry qickly to color your food} then put in the oven to finish the cooking. do not cover that will only steam, your dish
won't ever remain crispy. fry quickly before srving

difficult, unless you eat it after u fried it.

re- fried it will harden the food. leave it on clean kitchen towel at least keep it light if not all the oil make it greasy and not nice already.
