Pot roast is definately the best thing to come out of a crock pot.
Brown the chuck roast (you don't have to, but it's better). I have a crock pot that I can put right on the stove so I don't have to dirty an extra pan. If you use a separate pan to brown the meat, remove the meat to the crock pot.
Add a couple of large onions cut in quarters, a bunch of ribs of celery cut in big pieces and a few baby carrots to the browning pan. Brown them a little bit and add them to the pot roast. Again, you don't have to brown the veggies either but it's better. The dish will be good without browning, just not as good, depends on how much time and effort you have.
Add a carton of beef stock to the crock pot til it's almost to the top of the roast. Cook until it's done. I cook it on high if I'm in a hurry or low if I'm gone all day. Start it in the morning, it's good to eat when you get home from work. It should cook at least six hours.
You can make a thick gravy or serve the juice just the way it is. You might have to add some boullion to make it taste good. This recipe is also good with beef cubes (stew meat) you just don't have to cook it as long.
I serve the roast with potatoes and carrots, you can add them to the crock pot close to the end or cook them separate.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Get some pork rib meat, cube it into 2" cubes. Add to crock pot with 3 or 4 cups of your favorite BarBeQue sauce. Let cook 8 or 9 hours. Gentle pull the pork apart with a couple of forks. Way Yummy pulled pork for sandwiches.

I use mine to cook my chicken all day while I am at work. That way at night I can just take the cooked meat off the bone and then make my stew, soup, etc.
Saves me alot of time.
Lots of ideas in a cook book called "Crock Pot Recipes". I don't remember the author, but it has plenty of ideas for you.

i would have to agree with "pot roast", chicken is also very good - my secret is adding (depending on amount of meat being cooked) a half cup or more of red wine to the crock pot at start of cooking. if adding any other liqued (such as water, beef or vegetable stock) you may need to adjust to your taste - i usually add more not less :) and then there's the glass for the chef ;) ;). it really adds a wonderful flavor to the finished dish and the meat just melts in your mouth.

Crock Pot Rotisserie Chicken
One Whole Chicken ( can also use chicken parts)
Olive Oil Pam spray
Lawery's Season Salt (No substitutes)
Tin Foil
Wash and dry off chicken...Spray Chicken all over with Olive Oil Pam Spray...and then season with Lawery's Season Salt...Take Tin Foil and make about 4 tin foil balls the size of tennis balls or so... Spray Crock pot with Olive Oil Spray and put the tin foil balls in bottom of crock pot...Put chicken on top of tin foil balls breast side down...DO NOT ADD ANY WATER...Place cover on and make sure it fits properly (if need to push on chicken to squish tin foil balls a little until cover fits)...Set on High (will not work on Low) and Cook for about 4-5 hours...(a 3lb chicken will take about 4 hours)...When lifting out of crock pot, it will literally fall off the bone, so be careful...:-)...I usually spoon some of the juice over the pieces of chicken before serving....ENJOY!!!

If you like different types of dried beans or peas, it is great. Maybe, black-eyed peas. Layer peas in pot, about 1/2 inch. Fill with water up to about 2-3 inches from top. Add seasons, salt, pepper, bacon, fatback...... Cook for about 5-6 hours or until tender. Goes great with cornbread and fried potatoes.

Try those crock pot boxed dinners and add meat and let it cook for 8 hours on low. the chicken and dumplings one is yummy, and good with salad. :)

If you go to your local library, the cooking section always has tons of great "Crockpot Cookery" books!
If you create some recipes you really like, make sure you keep them in your own personal recipe journal.
When I look through crockpot cookbooks, it always blows my mind that there's so many easy recipes!
I don't use my crockpot enough either... but since you reminded me about it, I think I'll use it tomorrow! :o)

Salsa Chicken - put in chicken breasts or a whole chicken , then just pour in a tub of fresh salsa as is from the store and let it cook.
