this is what i do and it works 99% of the time.
when the eggs are done boiling make sure you peel them right away if you wait to long if will cause the egg to be difficult to peel.
then i crack on a hard suffuce and make sure to break the shell in as many pieces as possible..them get under the shell to the membrain and pull that off.the shell will come with it...hope this helps you...

I gaurantee this to work if you follow the directions.

PERFECT HARDBOILED EGGS!
Perfect, because they practically peel themselves! This even works well with farm-fresh eggs.

Gently place eggs in pan of cold water. Bring water to a boil, cover with lid, remove pan from fire (leave lid on pan), & let set 20 minutes. Drain water, add very cold water (may add ice cubes), let set for 2 or 3 minutes, then drain. Replace lid. While holding lid securely in place, carefully shake the pan of eggs until eggshells are cracked into very small pieces, & eggs are either out of the shells or easily removed from them. Rinse eggs clean of all shell pieces. Use boiled eggs as desired.

Note: This is a good way to boil eggs to paint for Easter, minus the shaking of the pan, of course. An added benefit is that the eggs will NOT have that ugly green ring around the outside of the yolk, leaving it much more appetizing, tasteful, & less gaseous.

Wait til the egg is about 2 weeks old before you start boiling them. Fresh eggs are hard or impossible to peel!

Then what I do is hit the shell against a surface and start peeling so they come off in large pieces. If you crack a lot more of the shell, then it will crack into tiny pieces and will be hard to peel.

Peel you egg over a strainer in the sink under cold running water. Nothing comes off but the shell.

As you peel the egg under the water it goes behind the shell to separate it from the egg.

Ah, I HATE PEELING HARD BOILED EGGS!!!!!

Last summer, the resort I worked at decided that we could make 3000 (yes, three thousand) deviled eggs for July Fourth..... my best technique is this....

When you drain the water after cooking, but before you shock them in ice water, give them a sharp shake in the pot. This will crack the shells and when they are shocked in ice water, they will be easier to peel. Fresh eggs are easier to work with than old eggs... Rolling them on your work surface will also remove the shell, but even still, you may have to run a few under the faucet. Hope this helps :-)

Crack the egg flat against a counter or table, and roll it forward one complete circle of the egg. Then just peel off the shell which is still stuck to the membrane that surrounds the hard boiled egg. It is really easy

THIS REALLY WORKS!!

As soon as you have finished boiling it:

Put the pan under the cold water faucet and let it run cold till cool enough to handle.

Take the still hot egg and crack it allllll over.

Crack that shell till there is nothing left to crack.
NOT HARD, just gently break the shell.

Then, roll it on the cabinet surface with the palm of your hand until the shell starts to peel off. GENTLY.

IT USUALLY COMES OFF IN ONE PIECE!!

When the egg is finished boiled fill cold water in the pot and leave the egg in there until that cools of too. Then crack the shell and peel it under water in the pot.

It is so easy!!! Just hit both surfaces and then roll it over so that all the crust cracks... then you peel it and the crust comes of at once, like the skin of a mamon chino!!!
