Some call it a fad. But Yoshimura -- whose latest blind date turned out to be a slightly paunchy Korean computer programmer -- says she is nevertheless digging in her extraordinarily high heels for the long run

She is digging in her heels which means she is stubborn and doesn't want to go anywhere. If you have ever seen anyone try to make a mule do something and it just digs its heels into the ground and won't move, this is like that. Only she is wearing high heels so she is digging in her high heels, but heels none the less.

It means she is determined (digging in her heels) to stick with whatever it is she is doing for how ever long it takes (the long run) to accomplish the goal. The part about the "extraordinarily high heels" is added to give more emphasis to her determination.
