I don't know about all this other stuff. But this is how I do it.
I place the eggs in cold water in the pan, add a little salt to the water, bring to a boil, then set the timer for 15 minutes, go sit on my @ss, when the timer goes off I go run cold water over the eggs, until cool, then peel with no problem.
I am lazy and I do it the easiest way I can.

its because you didn't keep stiring them while they were cooking.
It happens, when you just dump them into the boiling water and just leave them to cook and come back when ever you think they are done and ready.
Its the ones on the bottom that cook too fast, that a lot of the moisture inside cooks out of it, so instead of peeling easily, the shells stick to the egg inside.
If you're gonna boil eggs, and don't want them to be over cooked, try cooking them at a lower temperature, and stirring the pot from time to time so that they cook evenly.
I sometimes do that myself. just dumping them in and forgetting them until I realize they've been in there too long.
You need to use a timer to remind you to get up off your butt and stir the pot a few times.
That is why your eggs - suck.
If you like to cook your eggs in the "leave them in for a while" method, what you can do is use a bigger pot, only put in enough eggs that will line the bottom of the pot and be sure you boil enough water that it will be at least six inches deep before the water starts to boil.
As soon as the water starts to boil like crazy, turn off the heat, completely.
Then go ahead and put your eggs in the hot water. Go ahead and just leave them there, go do what you gotta do, get on with your life.
By the time the water gets cold, your eggs will be cooked to perfection every time.
Why? because its the residual heat that is IN the water that will cook them, and that the extra water will hold the extra heat to do the job of cooking your eggs thoroughly. It might be good to leave a lid on just in case (if you got Air Conditioning - it will cool the pot faster than you want it to).

Eggs of different ages peel differently. Older eggs (about a week) will peel easier due to the gas buildup in them separating them from the shell.
When you boil eggs, bring the water to a boil, then remove it from the heat. Put in the eggs and let them sit for 10 to 15 minutes. Put them in cold water for about 5 minutes and peel. The reduction in temperature also helps separate the egg from the shell.

undercooked, overcooking a boiled egg is better than undercooking it. I make boiled eggs often, its an easy way to avoid the fatty yolk. I eat about 3 of the yolks out of a dozen eggs.
Sometimes I endulge and make deviled eggs.. they are yum.. all yolk though. I do 6 at a time.. try it sometime.
Boil eggs from cold water to full heat until they go to a rolling boil, then turn it down a lil bit. Works for me.

You're too funny! It's because they all don't come from the same chicken, and some are older than others. As soon as you are done boiling them, immediatley run them under cold water to cool them down. The quick cool down causes steam to build up between the shell and the egg and makes it easier to peel,

Boil water first then introduce the eggs. The shell's will peel easy on all the eggs and the yolk will stay in the center of the egg.

You need to make the water cold when you put them in, then heat them to boiling. That will make them all peel clean
