This recipe you can change to your taste. I did it with chicken and carrots, onions and mushrooms. You can change the veggies if you want. For the cooking wine get something in the $8-10 semi sweet. You need only 2 chicken breasts (you can double it and make more if you like).
The second link is a salad. Again can be modified. I used butter lettuce instead of bib. you could also use Iceberg instead of the bib lettuce which costs less, don't skip the romaine though.
I did this for valentines day. He loved it (he's a chef so it's a real complement to hear that).
Here's how I did the arrangement for the food.
Salad in salad plate.
Arrange the lettuce on the plate then place the Pears in a pinwheel shape. I cut them in eights instead of quarters (smaller bites). Drizzle the dressing on in circular fashion.
Chicken on serving platter.
Place the veggies on the plate first place the chicken on top. drizzle the sauce on that.
TIP for thickening the broth... take a chunk of butter sprinkle a little flower on it. mix it well... add more flower. Keep adding until it has a consistency of dough. Put the broth on the stove, add little chunks of the butter mixture and stir. This is how the professionals thicken their sauces.
Print these off to help you! good luck!

There's nothing more simple and more romantic than a good filet, baked potato and salad by candelight. I like the strawberry & whipped cream idea too for dessert of course. Congratulations on the job!

Chicken Cordon Bleu for Two
2 Boneless Skinless Chicken Breasts
4 slices of Ham
1 small block of spreadable Cheese (garlic & herb is best)
1/3 cup Italian Bread Crumbs
2 tbsp Pamesian Cheese
2 tbsp Butter
Pound chicken breasts to 1/4" thick with a meat malet. Spread a thin layer of cheese on chicken. Top with 1 or 2 slices of ham. Roll up each breast and secure with a toothpick. Combine bread crumbs, and Parmesian cheese... roll chicken in crumbs.
Place in cooking dish and dizzle melted butter over chicken.
*remove toothpicks!
Bake uncovered at 350 degrees for 40 to 45 minutes- or till chicken is done.
-That's my husbands favorite. And you can make mashed potatoes or his favorite veggie to go with it.

Basic Pie Crust
Serving Size : 2 9-inch pie crusts
2-1/4 cups All-purpose flour
1 teaspoon Salt
1/2 teaspoon Sugar
10 tablespoons Chilled butter, lard or shortening -- cut small pieces
4-1/2 tablespoons Ice water
Combine flour and salt in a medium bowl. Add butter or lard and cut into flour using your fingers, a pastry blender or 2 knives, until mixture resembles coarse crumbs.
Stir in water with a fork, 1 tablespoon at a time and work in with your hands until dough is just moist enough to come together in a smooth ball. You may not need to use all the water. Be careful not to overwork or dough will be tough.
If you're making 2 crusts, cut in half and shape each half into a flattened round. Wrap dough in plastic wrap and refrigerate for at least 20 minutes.
Remove 1 round of dough from refrigerator and place on a lightly-floured surface. Roll into a circle about 14 inches across and 1/8-inch thick. Gently fold dough in half, then in half again so that you can lift it without tearing, and unfold it into a 9-inch pie or tart pan.
Crimp edges or pinch in a decorative border. Fill and bake as directed in recipe. Dough may be prepared up to 2 days in advance and refrigerated, or frozen.

Buy a pound of good steak, cut in cubes and marinate in Italian dressing. Thread on skewers with onion, green pepper, mushroom, and cherry tomatoes, and grill. Serve with baked potato & sour cream, and a hot crusty loaf of Italian bread.
Then serve strawberries with whipped cream....to each other.....and go from there!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

Chilaquiles
Ingredients
(4 servings)
6 Eggs
4 Corn tortillas
2 Avocados
2 Tomatoes
4 tb Lime juice
4 ts Olive oil
Salt and pepper to taste
2 tb Butter or margarine
2 Onions; finely diced
1 c Cooked beef, chicken or pork (diced or shredded)
1 ts Chili powder
1/2 ts Ground cumin
Cilantro
Instructions
BREAK THE EGGS in a mixing bowl and beat them lightly. Cut the tortillas into eighths and add to the eggs. Let sit 15 minutes. Cut the avocados in half from tip to stem, and remove the pit. Using a paring knife, slice the flesh in each half from tip to stem in 1/2-inch slices without cutting through skin. Using a large spoon, scoop the flesh out of the skin in 1 piece. Lay cut side down on each plate and fan out the slices. Cut the tomatoes into slices and lay slices next to the avocado. Drizzle with lime juice and oil, and sprinkle with salt and pepper. Heat the butter in a large skillet over medium heat and add the onion, chili powder and cumin. Cook, stirring occasionally, 5 minutes. Add meat; cook just until warmed. Add the beaten eggs and tortillas and cook, stirring, until eggs are cooked to desired doneness. Arrange a mound of eggs on each plate next to the avocado and tomato. Garnish with some cilantro. Serve immediately.
Fiesta Rice
Ingredients
(6 servings)
1 md Onion finely chopped
1/2 sm Green pepper, chopped
3 tb Margarine or butter
16 oz Stewed tomatoes
1 ts Salt
1/8 ts Pepper
3 c Cooked rice
Instructions
Cook and stir onion and green pepper in margarine in 10 inch skillet until onion is tender. Stir in tomatoes, salt, pepper and rice. Simmer uncovered over low heat until hot, about 15 minutes. My husband likes dry rice as well, I haven't timed it when I make this so you may need to cook it longer to get it to the consistency you want it.
Refried Beans (Frijoles Refritos)
Makes 6 servings

2 cups dried pinto
2 medium onions, finely chopped
2 cloves garlic; chopped

Cover beans with water and soak overnight. Drain beans.
Add fresh water to cover, the onions, garlic, bay leaf and peppers. Cover, bring to a boil, reduce heat and simmer gently, adding more boiling water as necessary. Continue cooking until beans are soft. Add salt and pepper to taste. There should not be much liquid when beans are cooked.
In a food processor, purée the beans. Heat remaining lard in a skillet and sauté purée until it becomes a smooth, somewhat dry paste.
