I have TONS of spinach that will go bad before we can eat it all, would just as soon not feed it all to my compost pile. Canning is out as I don't have a pressure canner and I really don't want to give up my freezer space.
So that leaves dehydrating. I figure I could use it like a spice while cooking, maybe mix into pizaa dough, what else could I do with it? Any ideas?

It has such a high water content--are you sure it will work?

Anyway, if it does, you can use it with sour cream or mayo with spices for dips, or use it in place of parsley on anything, throw a few pinches in soup to punch up nutritional value, sprinkle in omelets or scrambled eggs, over pizza, in spaghetti sauce.......be creative!

i make a spinach ricotta filling for home made raviolis, but thats just cooked.... i have never heard of dehydrating it..... by the way, once cooked and chopped, even a whole lot of spinach turns to nothing, it shouldnt take up that much freezer space

Put it in an omelett with sun-dried tomatoes and basil.

make a homemade greek pizza, with these toppings... sauce, mozzerella, feta cheese, sliced olives, sliced tomatoes, and spinich... yum, it's always a hit in our house.

Use it with pasta in addition to oregano and garlic.
