i think i'm able to use applesauce..... but how much per egg??

Applesauce actually replaces oil, not eggs. You can use mayonnaise, throw in a good heaping spoonfull for each egg, or gelatin works ok, mix it up accordig to directions, or tapioca starch, 1 tbsn per egg.

As a general rule, the fewer eggs a recipe calls for, the easier they will be to substitute. So, if a cookie recipe calls for one egg, using an egg substitute will work much better than in a recipe that requires three or four eggs.

Using Bananas or Applesauce as an Egg Substitute:

Smash up or blend about a half a banana or 1/4 cup applesauce to use as an egg replacer in baked goods such as muffins, pancakes or yeast-free quick breads, such as pumpkin bread, and of course, banana bread! Bananas and applesauce add the perfect amount of thick moisture, like eggs, but they won't help your dishes rise or turn out light and fluffy, so be sure the recipe you are using includes a bit of baking powder or baking soda to help it rise if needed.

There is an Italian egg free recipe for cakes that come out more like little sponges, so do not know if you could use that for an egg free cake.

You could use applesauce and use 2 tablespoons per egg needed

Substitute 1 Tbls olive oil and 1 Tbls whole milk for one egg.
Better yet use 1 Tbls (mayonnaise, yogurt, sour cream) for the milk.

You can also use 1 Tbls applesauce or banana and 1 Tbls milk.

here is eggless cake.

2cups self raising flour
1 cup granulated sugar
1 cup oil (vegetable oil- soya bean, sunflower, or any you use) or margarine if u dont have any vegetable oil.
1 1/4 cup milk
1 teaspoon baking soda
vanilla essence or any you want (orange)
tutty fruity or any nuts of your choice or chopped dates.

in a blender mix oil and sugar very well. add milk and again blend well for few minutes. add little flour at a time and blend each time. just make it of falling consistency. add baking soda and again blend well. add tutty fruity or nuts of your choice and mix with wooden spetulla with light hands and pour in a greased baking tray and bake at 375 degree F for 40-45 mins.

if you are using margarine then beat it along with sugar and add 2-3 teaspoon milk if needed and beat till light and fluffy and add slowly little flour and milk at a time beating continuously.

you can also add cocoa and chocolate to prepare chocolate cake. use few spoons orange juice or essence with chocolate. it gives good taste.

or divide the mixture in 2 portions. in 1 add vanilla essence and to the other add cocoa. now put 1 table spoon of white and 1 of chocolate alternatively. remember on white put chocolate all the time. and bake. you can use icing on this cake of your choice.

just do a search on google..."replacements for eggs in a cake" and see what comes up. i saw a show on all of this stuff once, like if you don't have this, use that. it's definitely out there so just look around.
