PORK CHOPS WITH APPLE GRAVY
4 loin pork chops
Salt & pepper
2 tbsp. fat
1/4 c. water
6 tbsp. butter
2 c. apple juice
Dash of celery salt
8 oz. spaghetti, cooked
6 tbsp. flour
Season pork chops with salt and pepper to taste. Melt fat over low heat in skillet. Add chops and brown well on both sides. Add water and cover. Cook over low heat until tender, 30-35 minutes.

1 c. chopped, peeled apple
2 tbsp. butter
Dash salt
2 tbsp. flour
1/2 c. milk
1/4 tsp. white pepper
1 tsp. oil
Dash nutmeg
Using heavy skillet, heat small amount of butter and oil. Quickly brown chops on both sides. Turn down heat; cook, covered turning once or twice until fully cooked. Make apple gravy while cooking. Melt 1 tablespoon butter in saucepan. Stir in apples; cook a few minutes. Sprinkle with 1 tablespoon flour and cook 2 minutes longer. Set aside. In another pan, melt remaining butter; stir in 1 tablespoon flour. Cook 2 minutes. Pour in milk and cream, stirring until slightly thickened. Season with salt, nutmeg and pepper. Stir sauce into apples. Serve gravy over chops.

Pork Chops with Apples, Onions, and Sweet Potatoes
INGREDIENTS:
4 pork chops

2 onions, sliced into rings
2 sweet potatoes, sliced
2 apples - peeled, cored, and sliced into rings
3 tablespoons brown sugar
2 teaspoons freshly ground black pepper
1 teaspoon salt

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
Season pork chops with salt and pepper to taste, and arrange in a medium oven safe skillet. Top pork chops with onions, sweet potatoes, and apples. Sprinkle with brown sugar. Season with 2 teaspoons pepper and 1 teaspoon salt.
Cover, and bake 1 hour in the preheated oven, until sweet potatoes are tender and pork chops have reached an internal temperature of 160 degrees F (70 degrees C).

PORK STEAKS IN APPLESAUCE GRAVY
2 lbs. lean pork steaks/chops
1 tbsp. oil
1 (3/4 oz.) envelope brown gravy mix
1 (15 oz.) can or 1 1/2 c. applesauce
1/2 c. water
1 tbsp. honey
2 tsp. lemon juice
1 tsp. Worcestershire sauce
1/2 tsp. ginger
Using large heavy skillet, brown pork steaks in oil; drain off excess fat. Combine gravy mix, applesauce, water, honey, lemon juice, Worcestershire sauce and ginger; pour over pork steaks. Cover tightly and simmer 50-60 minutes or until pork is tender. Stir gravy once or twice during cooking time. 6 servings.
