I have a vegan co-worker who doesn't eat eggs, and when I had to make treats for his birthday, I used a banana instead of an egg in the recipe for chocolate chip cookies. The cookies turned out great!

Substitute 1 tablesppon olive oil and 1 tablespoon milk for the one egg. Better yet if you have plain yogurt or sour cream for the milk.
Adding 2 Tbls banana or applesauce will change the taste but is alos a recommended substitute for an egg.

Eggs help bind all the ingredients together.. If you don't use eggs then you need to substitute them for something else. Go to www.allrecipes.com and do a search for eggless sugar cookies. Hope this helps.

It will be dry and crumbly, plus, it just won't taste right. Like a ton of bitter flour with too much sugar. So, go with the recipe. Get an egg! Good luck.

egg is an emulsifier which means it is something that holds that cookies together. if you don't put in an egg your cookies may crunble. how ever if you don't have an egg you could try mayonaise or oil.
