Oh yeah go to foodnetwork.com they have great easy recipes that are rated by ease or difficulty. A great, easy and elegant meal that I like to make and never fails is steaks topped with bleu cheese or gorgonzola with a balsamic sauce. Sounds fancy but only takes minutes. Just type in steaks with gorgonzola in the search and it will lead you to all types but my favorite is one by Giada DeLaurentiis.....good luck

My favorite meal to prepare for other people (especially the ones that think I can't cook-my mother in particular, for whatever reason she thinks that I don't know how to cook, my boyfriend recently told her otherwise so she challenged me, this is what I cooked just to prove her wrong and piss her off), I like to cook shrimp scampi. Sounds all fancy schmancy, but it's pretty easy to make. I don't use exact measurements, sorry. Start by boiling some pasta, preferably angel hair. In a deep skillet melt a bunch of butter and add some olive oil, it should be a lot, don't be afraid the dish is supposed to be kinda rich. After all the butter is done melting, on low heat add some minced garlic (like 4 or 5 cloves), make sure it's pretty low, you don't want the garlic to burn or it tastes bitter. Then add some white wine, two buck chuck works just fine, don't break out the good stuff it's not necessary, add the juice of half a lemon (the lemon cuts down the richness a little), you'll want to add the other half later so hold onto it. Let that heat up for a couple minutes then throw in some shrimp (I like to get a bag of already peeled shrimp from Trader Joes, they come frozen so I just let them sit out for about 1/2 hour to defrost). At this point you want to season the shrimp, salt, pepper and some fresh basil. Let that sautee and come together, use your nose, when it starts smelling really good it's just about done. You don't need to let the shrimp cook very long, about 5-6 minutes is good. Then add the cooked and drained pasta to the pan (keep the fire going under the shrimp). Add the juice from the other half of the lemon, stir, then dump a bunch of parmesan cheese on top. Then serve! It sounds kinda hard, it's not, I'm just not very good at explaining myself, it's worth it though if you really want to shut your brother up. You may try going to foodnetwork.com or something if you want better directions, just go on there and look for the simplest recipe you can find. Bon apetite! Oh, I always like to serve asparagus when I make it, it tastes great with the buttery goodness that is shrimp scampi.

Lasagnais always good, but Ilike to kick mine up a little by adding pepperoni to it. Or you could try Chicken Fettucini Alfredo. Which is simple enough to do. Take some chicken breast and cut it up into bite size pieces and place in a fry pan with some olive oil and cook until brown on all sides add a little minced garlic to the pan and stir for about 1-2 min. Remove from heat and set aside. Prepare fettucini as per box directions and heat up a jar of alfredo sauce. when everything is hot and ready combine into one bowl. To make it more your own add a little grated parmesan to the top and a little chopped parsley leaves.

Baked spaghetti. Get Ragu sauce, brown 1 lb hamburger and put in the sauce. Cook your noodles. Put the sauce, hamburger, and noodles in a crock pot and let it simmer or cook on low for about 2 hours. This lets the flavor from the sauce soak into the hamburger and noodles. Finally, put a layer of spaghetti in a baking dish. Cover the spaghetti with three or four different cheeses before adding a second layer. Put the cheese on top of the second layer also BUT put mozerella (sp?) on top and sprinkle some parsley on top of the cheese. The parsley just makes the spaghetti look fancy. Place in the oven at low heat just long enough to bake the top layer of cheese. About ten or fifteen minutes will do. If your brother doesn't like it, kick him out of your home and remove him from your Christmas card list. Go Steelers!

My favorite "show off" meal is pretty easy but looks hard!
get some steak, asian vegetables (the choice is up to you, they even sell these prepared and frozen if your favorites are hard to find), and plain old white rice. Cut the meat into strips (or buy it that way beforehand), marinate it in a mix of soy sauce (70%), steak sauce (30%), garlic, salt and pepper, and just a bit of maple syrup for killer teriyaki beef. Don't stress too much the exact flavoring amount, it'll come together. Pan sear the steak on a skillet for a few minutes (just cut a piece in half to check done-ness) with a few onion slices (alternately, green onions look very ncie) and garlic, add in your veggies and maybe a bit of your tasty marinade, and serve rice on the side. Yum!
PS- the same recipe/etc can easily be changed for tofu/chicken/meat substitutes.
Have fun and prove him wrong!

This is soo easy and goes great with buttered/parmesan wide egg noodles, a salad & warm bread
Chicken Parmesan
4 boneless chicken breasts
1/2 c. parmesan (kraft)
1/4 c. flour
dash salt/pepper
1 tsp. paprika
1 egg
1 tbsp milk
1/2 stick melted butter
Preheat oven to 350. Wash chicken breasts and pat dry. Dip in milk/egg mixture than dip into dry ingredient combo (flour parmesan S&P, paprika mixed well) then lay in casserole dish.
Pour melted butter over the top and bake for 50-60 minutes.
A family favorite - for the side cook up the wide egg noodles and add butter, parmesan and a little pepper! Yum!

This soup is awesome! (I make it at work and the customers love it!)
Beef Stroganoff Soup
1/4 C. butter
1 lb. tenderloin tips cubed
2 cloves garlic minced
12 oz. mushrooms sliced
1 large onion diced
1 C. shredded carrots
1 pint of water
1 T. beef base
Roux made of 1/2 C. butter and 1/2 C. flour
salt and pepper
1 pint of whipping cream
1/2 C. sour cream
1/4 C. chopped chives
In a 5 qt. pot, melt the butter and add tips, garlic. Cook until meat is browned, about 5 minutes.
Add mushrooms and onions. Saute until onion is translucent.
Add carrots, water, beef base, salt and pepper. Bring to a boil and simmer for 15 minutes.
Make roux by melting butter and add flour to it. Stir until smooth and cook 2 minutes. Gradually add to soup, stirring all the time. Add whipping cream and taste to adjust seasonings. Remove from heat and add sour cream.
Ladle soup into bowls and top with chives.
Makes 6 - 8 servings.

chicken and yellow rice
boneless chicken breast
1 can cream of celery soup
1 can cream of mushroom soup ( can use cr.of chicken )
pr-heat oven to 375
place chicken in a baking dish sprinkle with salt and pepper mix soups together with 1/2 a can of water and pour over chicken cover with aluminum foil and put in oven for 45 min
meanwhile cook yellow Spanish rice (or you can cheat and use chix. Rice-A-Roni or if you don't like rice you can use a can of new potatoes )
remove chix from oven be careful when removing foil then serve the soup is a great gravy

Something simple, but deelish... like spaghetti and meatballs, or a simple tofu and veggie stir fry. Remember, always serve with warm bread w/ olive oil for a simple, but good appetizer. AND, of course, have a nice dessert. For dessert, buy apple pie, warm it up, put vanilla ice cream on top, and top off with a teaspoon of caramel sauce. Good luck!

pepper steak.it takes a couple hours but its simple.buy a round steak and.cut steak brown in oil add garlic head to 1/4 cup soy sauce. add 1 cup water cook 1 1/2 hours.and add different colored peppers 10 minutes before done
