I'm really stressed right now about a bad roommate situation (I'm giving her notice tomorrow to terminate tenancy) and every time I think about it, I feel my stomach lurch, right below my rib cage.

Am I going to give myself an ulcer over the course of a couple weeks with a feeling like that in my stomach?

No. Your muscles are tightening up because of the stress. Ulcers are caused by bacteria, according to the latest medical information.

I'm not sure, but I did have gastritis (precursor to a stomach ulcer). So... I'd recommend: eat some TUMS when you feel that lurch. Other stomach acid reducers will help too (IE: Pepcid AC, Tagamet, etc.), but... I that think your stress will abate when the roommate is gone. In the meantime, take deep breaths and try to relax a bit. Maybe take a walk or get some exercise. Good luck.
