Plain ol' Mimosa... Champagne & OJ.

Or champagne, pineapple juice, w/ a spray of ginger ale (or 7-up).

Kir Royal is made with Creme de Cassis and Champagne.
Kir Imperial is made with Creme de Framboise (raspberry) and Champagne.
Traditionally, the ratio is 1/3 creme de x and 2/3 champagne, but I prefer something close to 1:5 or less, as the creme is quite sweet.
Very delicious!!!

By the way, Kir = Creme de Cassis + still white wine. The name came from Kir, a certain politician in Dijon, France (where the "cremes" are made) who popularized the drink.

Bellinis:

2 cups sugar
1 cup water
3 (16-ounce) bags frozen peaches, thawed
1 teaspoon grated orange peel
4 to 6 (750-ml) bottles Prosecco or other sparkling wine, chilled
Orange peel twists, for garnish

Stir the sugar and water in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely.
Puree the peaches and orange peel in a blender with 1 1/2 cups of the sugar syrup until smooth. Strain through a fine-meshed strainer and into a bowl. Transfer the puree into a pitcher or clear glass bowl.

For each serving, pour 2 to 4 tablespoons of the peach puree into a Champagne flute. Slowly pour enough Prosecco into the flute to fill. Gently stir to blend. Garnish each with an orange peel twist, and serve.

Do-Ahead Tip: The peach puree can be made 1 day ahead. Cover and refrigerate.

A Kir Royale is delicious just pour about 1/2 ounce of Chambord or any rasberry flavored liquor into the bottom of the champagne glass with a lemon zest and fill with champagne.

Orange juice and Champagne is very good. Especially with fresh strawberries to eat with it. It is called a Mimosa, not sure of the spelling though LOL I have seen it spelled 2 ways.

Probably a Mimosa...half champagne and half orange juice...I'm not crazy about champagne but I like it this way.

try lemon sorbet very frozen mixed with champagne. serve it in a regular champagne glass
