How much APPROXIMATELY would it cost to replace the tan insides of a vw beetle (including cloth AND/OR plastic siding/console)?

If you are talking "New Beetle", and you're replacing the dash, console, seat covers, carpet, headliner, etc. with all black replacements...including labor... Wow. It will be pricey. Put it this way....I replaced just the leather seat covers and the carpet on my '88 Corvette and that was most of $2000 just for the materials-and that wasn't from a dealer, which in your case you'll likely need to order a lot of your stuff from a VW dealer (higher costs). I'll conservatively estimate $3000-4000 if you are doing the whole thing including console, etc. for the parts, and more with labor included if you have it done.

Now, if you were talking about an old-school VW bug, then you can find a lot of interior stuff for it without having to pay dealer prices. Mid America Designs has a whole catalog of VW stuff....but I think it's for older ones...although you could check it out.
