Here's the best jerk chicken you'll ever put in your mouth. My Hubby begs me to make it.
4 6ounce boneless, skinless chicken breasts
1 medium onion, sliced
1 small box fresh sliced mushrooms
1/2 cup Naturally fresh blue cheese salad dressing
1/4 cup diced (canned) jalapeno peppers, with about 1 tablespoon juice
McCormick's dry jerk seasoning (accept NO substitutes!)
1/2 cup vegetable oil
1 can black beans
Rice, for a side dish
Quartered Pita bread
Mix jalapenos and dressing together and set aside. The longer it sits, the better it gets.
Marinate chicken with all but 1 tbsp. of the oil, and a coat of jerk seasoning (to taste). Marinate for at least 30 minutes.
Grill chicken for about 6 minutes per side, turning once.
Add pita to the grill, and brush with butter, grill for about 2-3 minutes, turning once.
Saute onion and mushrooms in pan with remainder of oil until onions are done, and liquid is reduced.
Meanwhile, cook your beans and rice.
Serve chicken topped with onion and mushroom mixture, and a side of sauce to dip. The sauce makes it soooo good. Even if you don't like blue cheese.
Put black beans rice, and grilled pita bread on plate, and DIG IN!

Jamacian Jerk Chicken
REALLY spicy!
6 chicken breasts -- put in plastic bag or non-reactive bowl.
Put the following in a blender & blend until smooth.
4 habanero peppers
12 cloves garlic
4 green onions
1 C orange juice
1 C lime juice
1 bunch fresh cilantro
Marinate chicken in fridge for 4-6 hours. Place chicken in large casserole pan, pour marinade over.
Cook at 325 for 50 minutes, spooning marinade over chicken occaisionally.
Serve with steamed rice and a fruit dessert. Ice-cold beer optional. Habanero peppers are said to be the hottest of the hot, but jalapenos really don't work in this recipe. If you are a chile-head, you will love this.
