Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Here is something that is quick and easy and I might say quite tasty!. Make some huge hamburger patties and season them with salt, pepper and a little garlic powder. Put them in a casserole dish. Then add: cream of mushroom soup (mixed with a little milk or water), mushrooms, sliced onion, carrots and potatoes. If you want it too be super fast, then use frozen carrots and canned potatoes. Cover the whole thing with aluminum foil and bake at 425 for 25-30 minutes..depending on how well done you like your meat. It is really very good...we call it "Hobo Casserole". Don't know why we do we just always have :)

I like to serve mine with mixed veggies
Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

marinate the meat first. That always adds a special touch to a meal. Get small white potatoes, peeled fresh tomatoe, basil,1 packet ranch dressing (dry), celery, small pieces of carrots, squash and put in aluminm foil and put on the grill. Than put the marinated meat on the grill and cook. Makes a great meal. Add a salad and Whallaaa! Enjoy!

here's a simple recipe for chicken - to be served with baked potato or rice.
LEMON CHICKEN
INGREDIENTS:
* 2 (6 pound) whole chicken, quartered
* 1 dash garlic powder
* 1 pinch salt
* 1 pinch ground black pepper
* 2 onions, thinly sliced
* 2 green bell pepper, sliced
*2 lemons, juiced
* 1/2 cup white wine
* 1 pinch dried parsley
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Season chicken with garlic powder, salt and pepper. Place in 9 x 13 inch baking dish. Add onion and bell pepper slices by placing on top of chicken. Pour lemon juice and wine over entire chicken. Cover with foil.
3. Bake for 1 hour. Remove foil, and brown for about 15 minutes longer. Garnish with parsley flakes, and serve.
It doesn't say to soak the chicken in the juice overnight, but you sure could, I bet it'd be delicious and tender!

Alfredo Fettuccine Pasta with a Garden Salad with garlic butter french bread.
Easy to cook pasta. The Alfredo sauce you can buy already made in a can at the store. The salad comes in those bags with everything inside it already (nuts, dressing, croutons) and the bread comes already baked and with butter and garlic at Albertson. Good Luck.

if you have a george forman grill you can cook some fish on it with lemon pepper and lemon....or you can make homemade chicken tenders with baked potatoe...take the chicken tenders and dip them in egg and then smother in bread crumbs and floor mixed together...fry in veg.oil for about 5 min. until golden brown and they are so good.
