Guacamole Dip Recipe

Some like it hot!,. If not, just cut back on the chilis and you've still got the best party dip recipe west of the Pecos.

4 avocados
4 cloves garlic, minced
1/4 sweet red onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 red chiles, seeded and finely chopped
4 tablespoons olive oil , divided
Juice of 1 lime
Salt and pepper to taste
Pinch of cayenne, for garnish

Cut the avocados in half lengthwise and remove the seeds.

Scoop out the meat into a medium-size bowl and mash with a fork. (Do not process in a food processor or blender.)

Gently stir in the garlic, red onion, jalapeno pepper, red chiles, 3 tablespoons of the olive oil, and lime juice. Add salt and pepper.

Transfer to a serving bowl, if necessary.

Drizzle the remainder of the olive oil over the Guacamole and sprinkle with cayenne for presentation. Serve immediately. Makes 3 cups.

Note: Guacamole Dip does not keep well, but adding a tablespoon of lemon juice helps preserve the color.

Well I make mine with asparagus as it is healthy.

Cut up a fresh tomato and onion,

Then put the asparagus or avocado in the food processor.

Then I add half a cup of chunky salsa and about 1/2 cup of sour cream. Mix it all up including the tomato and onion and you can add some chili powder to spice i up if you like it a little hotter.

My family prefers my asparagus kind as it is lighter and has a better taste they even eat it on chips as a dip so much healthier. I also use the fat free sour cream but either is fine.

1 small ripe Haas avocado
1 tablespoon minced jalapeno pepper
2 tablespoons minced red onion
1 tablespoon chopped cilantro leaves
1/2 lime, juiced
Salt

Halve the avocado and remove the pit with a sharp knife. Discard the pit. Scoop the flesh into a small bowl and mash with a fork. Stir in the remaining ingredients, season with salt to taste, and set aside.
Yield: about 2/3 cup

4 ripe avocados
2 limes, juiced
1/2 medium red onion, finely chopped
1 big handful fresh cilantro leaves, finely chopped
1/4 teaspoon ground cumin
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper

Halve and pit the avocados; with a spoon scoop out the flesh into a bowl. Mash the avocados with a fork, leaving them a bit chunky. Add the remaining ingredients, and fold everything gently together to mix. Taste and adjust seasoning.
Lay a piece of plastic wrap right on the surface of the guacamole so it doesn't brown and refrigerate for at least 1 hour before serving.

Garlicky Holy Guacamole!
Recipe courtesy Rachael Ray

2 ripe small Hass avocados
1 lemon, juiced
1 large clove garlic, minced
1 jalapeno, seeded and finely chopped
1 small plum tomato, seeded and finely chopped
1/2 small yellow skinned onion, finely chopped
1 teaspoon coarse salt
Blue corn tortilla chips, for dipping

Cut avocados in half around the pit. Separate the halves. Pop out pit with spoon, then scoop flesh of avocados into a bowl. Squeeze the juice of a lemon over the avocados. Squeeze the juice with the lemon halves facing cut-side up, allowing the juice to spill down over the sides of the lemon into the bowl. This method keeps the seeds in the lemon and out of the guacamole. Add garlic, jalapeno, tomato, onion and salt to the bowl. Mash and mix the ingredients into a chunky dip using a fork. Serve with blue corn tortilla chips.

Easy way: get an avocado (the black skinned Haas type is best). Cut around it vertically "unscrew it", use a spoon to get out the meat. Add a little lime juice (or lemon if no lime) to keep it from turning brown. Mash it up. Add some salsa (the hotter the better) and mix. If you really like cilantro chop some and put it in too.

Mashed up avocados, finely chopped tomatoes and onions, and the juice of one freshly squeezed lemon (keeps the avocado from turning brown). Mix it all together, refrigerate until ready to serve and .... there you go!
